Melon Soup

Combine the melon, orange, vinegar, honey and apple juice in food processor
- 1 large ripe melon chopped (3 cups)
- 2 oranges, peeled, diced (1 cup)
- 1 t rice wine vinegar or 1 t lemon juice
- 1 T honey
- 2 cups apple juice
- 1 T chopped mint
- Salt
Honey Wheat Bread

1.Dissolve yeast in warm water
- 2 cups warm water (110 degrees F/45 degrees C)
- 2 cups whole wheat flour
- 1 tablespoon active dry yeast
- 1 teaspoon salt
- 1/3 cup honey
- 1/3 cup vegetable oil
- 5 cups all-purpose flour
Peach Orange Sauce

Place peach slices in blender and process until smooth
- 2 cups fresh or thawed peach slices
- 3/4 cup orange juice
- 2 T light corn syrup
- 1 t cornstarch
Pizzelles

Beat all ingredients. Place spoonful of mixture in center of each pizzelle design
- 3 eggs
- 3/4 cup sugar
- 3/4 cup melted butter
- 1 1/2 cups flour
- 1 t baking powder
- 2 t vanilla
- 3 T milk
Raspberry Sauce

Press berries through a sieve to remove seeds
- 2 1/2 cups fresh or thawed raspberries
- 1/4 cup water
- 2 T sugar
- 2 t cornstarch
Chicken Marsala

Put oven rack in middle position and preheat oven to 200°F
- 1 3/4 cups reduced-sodium chicken broth (14 fl oz)
- 2 tablespoons finely chopped shallot
- 5 tablespoons unsalted butter
- 10 oz mushrooms, trimmed and thinly sliced
- 1 1/2 teaspoons finely chopped fresh sage
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 cup all-purpose flour
- 4 skinless boneless chicken breast halves (2 lb total)
- 2 tablespoons extra-virgin olive oil
- 1/2 cup plus 2 tablespoons dry Marsala wine
- 2/3 cup heavy cream
- 1 teaspoon fresh lemon juice

- 4 Tablespoons butter
- 8 ounces fresh button mushrooms, minced
- 1/2 cup minced green onions, plus additional for garnish
- 1 teaspoon minced garlic
- 1/3 cup chicken stock
- 4 ounces cream cheese, softened
- 2 teaspoons Worcestershire sauce
- 1 1/2 teaspoons minced fresh thyme
- 1 teaspoon fresh lemon juice
- 1 teaspoon salt
- dash of ground black pepper
- toast points, crackers or pita chips for serving
