Spinach-Stuffed Beef Tenderloin

In a large nonstick skillet, saute mushrooms and onions in 1 tablespoon oil until mushrooms are tender
- 1/2 pound fresh mushrooms, chopped
- 4 green onions, sliced
- 2 tablespoons olive oil, divided
- 2 garlic cloves, minced, divided
- 2 packages (10 ounces each) fresh spinach leaves
- 1 teaspoon salt, divided
- 1/8 to 1/4 teaspoon cayenne pepper
- 1 beef tenderloin roast (3-1/2 pounds)
- 1/4 teaspoon onion powder
- 1/4 teaspoon coarsely ground pepper

Asparagus Bread Pudding With Spring Onions

Chèvre and prosciutto add to this wholesome dish
- 1 lb. asparagus, stems peeled leaving tops plus 1" unpeeled
- 1 bunch green onions, washed and trimmed
- 1 large loaf pain de campagne (French for "country bread"), at least one day old and preferably several
- 3-1/2 oz. prosciutto, cut into 1" strips
- 8 oz. soft unripened chèvre cheese
- 6 large eggs
- 2-1/2 cups milk (homogenized or 2%)
- 2-1/2 cups whipping cream (35%)
- 2 tsp salt
- Freshly ground black pepper, to taste
- 1/4 cup loosely packed chopped fresh Italian parsley
- 3 tbsp finely chopped chives
- 2 tbsp chopped fresh tarragon leaves
- Butter for baking dish
Carrot Ginger Soup

This carrot ginger soup recipe celebrates an ingredient that too few of us keep in the kitchen
- 3 tablespoons of butter, or a few of splashes of olive oil (or half of each)
- Small pinch of salt
- 1 pound carrots, chopped
- 1 medium onion, chopped
- 1 stalk of celery, peeled and chopped (peeling gets rid of the "strings")
- 1 teaspoon ginger, chopped or grated (what would a carrot ginger soup recipe be without it!)
- 5 cups chicken broth or stock; or use vegetable stock for vegetarian version.
- Zest of half a lime
- Juice of one lime
Bourbon Mustard Chicken

Preheat oven to 350 degrees
- 4 chicken breasts
- 2 tbsp. dark brown sugar
- 1/4 cup Mrs. McGarrigle's Creamy Champagne Mustard
- 1/4 cup Bourbon
- 2 green onions, thinly sliced
- sea salt to taste
- 1 tsp. Worcestshire sauce
- 2 tbsp. butter
- 1 tbsp. olive oil
- 2 green onions, thinly sliced
- 1/3 cup chicken stock or water
Turkey Pie with Two Potato Topping

A casserole with white and sweet potatoes
- Two -Potato Topping
- 2 large Ontario Yukon gold potatoes, peeled and quartered
- 2 large sweet potatoes, peeled and quartered
- 2 tbsp butter
- Milk
- Salt and pepper
- Filling
- 4 cups chopped cooked turkey
- 1-1/2 cups cooked leftover or frozen vegetables (such as peas, carrots, corn, sautéed mushrooms)
- 3/4 cup turkey gravy (approximately)
- Salt and pepper
- 1 cup leftover stuffing (optional)
Seared Scallops on Apple & Celery Slaw with Reisling Vinaigrette

Light and delicious snack, appetizer or meal - just double up on the scallops
- Scallops
- 4 large scallops
- 1 tbsp olive oil
- Sea salt
- Heat pan with olive oil on medium-high heat
- Sear scallop on both sides, 1 minute per side
- or until golden brown colour develops.
- Season with salt.
- Slaw
- 1 Granny Smith apple.
- 1 stalk of celery.
- Julienne apple and celery, season lightly
- with salt and pepper and toss with 1 tbsp
- of vinaigrette.
- Serve seared scallops on top of apple salad.
Molten Spiced Chocolate Cakes

- 4 oz (115 g) semi-sweet baking chocolate
- 1/2 c butter. 125 ml
- 1 tsp Cabernet Sauvignon 15 ml
- 1 tsp vanilla 15 ml
- 1 c icing sugar. 250 ml
- 2 eggs
- 1 egg yolk
- 6 tablespoon flour 90 ml
- 1/4 tsp ginger 1 ml
- 1/4 tsp cinnamon 1 ml
- 1/8 tsp ground cloves .5 ml
