- 5 eggs lightly beaten
- 1/3 cup parm cheese
- 1-1/4 cup Kraft 4 cheese italiano cheese, shredded
- 1 package fresh spinach, cooked well drained and chopped
- 1/2 tsp basil
- salt and pepper to taste
- 2 small tomatoes, thinly sliced
Chili Sauce

Myrna Kerr's Chili sauce tastes as good as it smells!
- 18 large tomatoes
- 6 medium onions
- 12 apples
- 1 head celery
- 3 green peppers
- 3 c brown sugar
- 1/2 c vinegar
- 1 1/2 tbsp cloves ground
- 1 1/2 tbsp all spice
- 3 tbsp salt
CHRISTMAS BISCOTTI

Crisp and delightful these biscotti can be dipped in white or dark chocolate
- 2/3 cup (150 mL) vanilla sugar, (see note for recipe)
- 4 cups (1 L) granulated sugar
- 1/3 cup (75 mL) butter, softened
- 2 tsp (10 mL) baking powder
- 1/2 tsp (2 mL) ground cardamom
- 2 eggs
- 2 cups (500 mL) all purpose flour
- 3/4 cup (175 mL) snipped dried cherries or dried cranberries
- 3/4 cup (175 mL) chopped shelled green pistachio nuts
- 6 oz (170 g) white chocolate, chopped
- 2 tsp (10 mL) shortening
Fettucine with veal, asparagus & shallots

A sophisticated pasta dish with a complex sauce that makes a superb main course for a special dinner
- 2 cups (500 mL) red wine
- 2 tbsp (25 mL) balsamic vinegar
- 1 tsp (5 mL) sugar
- 2 cups (500 mL) chicken stock
- 2 tbsp (25 mL) butter
- 10 oz (300 g) veal fillet
- 8 shallots
- 4 oz (125 g) asparagus spears, trimmed and sliced in 2-inch (5-cm) lengths
- 1 tbsp (15 mL) butter
- Pinch sugar
- 8 oz (250 g) oyster mushrooms, sliced in half
- 1 lb (500 g) fresh fettuccine
- Freshly ground pepper
- Chopped parsley
Grilled Acorn squash with balsalmic drizzle

Cut each squash in half lengthwise; scoop out seeds
- 2 acorn squashes, (about 3 lb/1.5 kg total)
- 1/4 cup cup(50 mL) extra-virgin olive oil
- 1/2 tsp tsp(2 mL) each of salt and pepper
- 1 tbsp (15 mL) chopped fresh sage, (or 1/2 tsp/2 ml dried, crumbled)
- 1 tbsp tbsp(15 mL) balsamic vinegar
- 1 tsp (5 mL) Dijon mustard
- 1 minced clove garlic

- 1 tub (250 g) Philadelphia Strawberry Light Cream Cheese Spread
- 1 cup thawed Cool Whip Light Whipped Topping
- Zest and juice from 1 lime
- 2-1/2 cups (370 g) cubed cantaloupe (about 24 cubes)
- 2-1/2 cups (400 g) cubed honeydew melon (about 24 cubes)
- 24 fresh strawberries, hulled
Spring Asparagus and Turkey Pie

1 Heat oven to 350°F. In 2-quart saucepan, melt butter over medium heat
- 3 tablespoons butter or margarine
- 1/4 cup chopped onion
- 2 tablespoons all-purpose flour
- 1 cup half-and-half
- 1/8 teaspoon pepper
- 2 cups cubed cooked turkey or chicken
- 1/2 pound asparagus cut to bite-sized portions
- 1/2 cup sliced fresh mushrooms
- 3 tablespoons dry white wine or chicken broth
- 1 can (8 oz) refrigerated crescent dinner rolls

- 1 med onion, chopped
- 1 boneless port roast 3 pounds
- 3/4 c ketchup
- 1/2 c chili sauce
- 1/2 c apple sauce
- 1/4 c honey
- 1/4 c red wine vinegar
- 2 tbsp worchestershire sauce
- 3 cloves garlic, chopped
- 1/4 tsp red pepper flakes
- 1/4 c cornstarch
- 1/2 c apple juice
Spicy Shredded Napa Cabbage Salad

- 1 red chile, such as red Thai, thinly sliced
