Chocolate Cake S’mores Cookies

1. Preheat oven to 350 degrees F
- 1 box devil’s food cake mix
- 2 eggs
- 1/4 Cup brown sugar
- 1/2 Cup melted butter (1 stick)
- 3 Hershey’s Chocolate bars, cut into rectangles
- 1 1/2 Cups mini marshmallows
- 1 1/2 Cups graham crackers, cut up into small pieces
New Mexico Tea Bar Muffins

Preheat oven to 400 degrees
- 1 cup butter, softened
- ½ cup sugar
- 5 large eggs
- ¾ cup New Mexico Hatch green chiles, diced (fresh is best; frozen or canned will substitute)
- 1 ½ cups fresh corn kernels from cob
- (or substitute frozen or canned)
- ¾ cup cheddar cheese, shredded
- ¾ cup jack cheese, shredded
- 1 cup unbleached flour
- 1 cup yellow cornmeal
- 2 teaspoons baking powder
- 1 teaspoon salt
Good Grains Fruit Cookies

When you want to give your family a treat that packs extra nutrition too, try these moist and flavourful cookies
- 1-1/2 cups (375 mL) mixed dried fruit (apples, apricots, peaches, pears, raisins, cherries, cranberries, blueberries)
- 1/3 cup (75 mL) ground flax seeds
- 1 cup (250 mL) Milk
- 2-1/2 cups (625 mL) quick-cooking rolled oats
- 1-1/2 cups (375 mL) whole wheat flour
- 2 tsp (10 mL) baking powder
- 1-1/2 tsp (7 mL) ground cinnamon or ginger
- 1/2 tsp (2 mL) salt
- 1 cup (250 mL) butter, softened
- 1-1/4 cups (300 mL) packed brown sugar
- 1 egg
Sea Salt Caramels dipped in Dark Chocolate

Line cookie sheet or lasagna pan with parchment paper, spray with cooking spray
- 4 cups heavy cream
- 3 cups sugar
- 1 cup light corn syrup
- 3 tbsp unsalted butter
- 1 1/2 tbsp sea salt
- 1 bag semi sweet chocolate chips (12 oz)
- 6 squares Baker’s unsweetened chocolate (6 oz)
Pecan Pie Bars

Preheat oven to 350F. Prepare and bake Cookie Crust as follows: Spray 10 x 15-inch baking dish with Pam
- *Crust:*
- 1/2 C. Sugar
- 1/2 tsp. Salt
- 2 1/2 C. Flour
- 1 C. Butter or margarine, softened
- *Bars:*
- 4 Ea. Large eggs
- 1 1/2 teaspoons vanilla
- 3 Tbs. Butter or margarine
- 1 1/2 C. Sugar
- 1 1/2 C. Karo syrup
- 2 1/2 C. Pecan halves
Beachcomber Cookies

Heat the oven to 350 degrees F and arrange a rack in the middle
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 3/4 tsp table salt
- 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 2 sticks unsalted butter (1/2 pound), room temperature
- 1 3/4 cups packed light brown sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2 cups old-fashioned oats
- 1 cup milk chocolate chips
- 3/4 cup toasted flaked unsweetened coconut
- 3/4 cup finely chopped toasted pecans
Oven Baked Onion Bhajis

Heat a couple of tablespoons of oil in a large pan and fry the onions for about 10 minutes
- Spices for the pan:
- 450g onions, sliced
- 90g gram flour (also known as chickpea flour. You can get it from most supermarkets or a local Indian shop)
- Vegetable oil
- 1/2 tsp salt
- 1/2 tsp ground coriander
- 1/2 tsp ground cumin
- 1 heaped tsp tomato puree
- 1/2 tsp turmeric
- 1/2 tsp ground coriander
- 1/2 tsp ground cumin
- 1/2 tsp ground ginger
- 1/2 tsp chilli powder
Sweet Oil Pastry Dough

Makes enough dough for two 9-inch single crust pies
- 2 1/4 cups all-purpose flour
- 1 tbsp granulated sugar
- 1/4 tsp salt
- 1/2 cup vegetable oil
- 4 to 6 tbsp orange juice, milk or soy milk
- Use a light-flavoured oil, such as canola oil. Olive oil would not make a good replacement unless you're making a savory pie.
- The dough should be pressed into the pan right after making. It shouldn't sit around or be chilled first.
- This soft-textured dough doesn't work well for a prebaked crust. It is best used for a pie that requires an unbaked crust.
Balsamic Grilled Peppers

Grill these first so that they have time to cool to room temperature while the sausages are cooking
- 3 sweet peppers
- 2 tbsp (25 mL) balsamic vinegar
- 1 tbsp (15 mL) chopped fresh basil
- 1 tbsp (15 mL) extra-virgin olive oil
- 1 Pinch granulated sugar
- 1 Pinch each salt and pepper
German Strawberry "Pfannkuchen" (Pancakes)

Heat a skillet (I prefer a non-stick)to medium heat
- Measurements are "approximate". You want the batter to be fairly thin, but not watery.
- 3 cups all-purpose flour
- 3 1/2 cups milk
- 2 eggs
- 1 tsp. vanilla
- unsalted butter (for the skillet)
- NOTE: You can make the batter a little thicker, if you prefer thick pancakes. I've adapted my mother's version to be thinner- more like crepes.
