Makes enough dough for two 9-inch single crust pies

  • 2 1/4 cups all-purpose flour
  • 1 tbsp granulated sugar
  • 1/4 tsp salt
  • 1/2 cup vegetable oil
  • 4 to 6 tbsp orange juice, milk or soy milk
  • Use a light-flavoured oil, such as canola oil. Olive oil would not make a good replacement unless you're making a savory pie.
  • The dough should be pressed into the pan right after making. It shouldn't sit around or be chilled first.
  • This soft-textured dough doesn't work well for a prebaked crust. It is best used for a pie that requires an unbaked crust.

Heat a skillet (I prefer a non-stick)to medium heat

  • Measurements are "approximate". You want the batter to be fairly thin, but not watery.
  • 3 cups all-purpose flour
  • 3 1/2 cups milk
  • 2 eggs
  • 1 tsp. vanilla
  • unsalted butter (for the skillet)
  • NOTE: You can make the batter a little thicker, if you prefer thick pancakes. I've adapted my mother's version to be thinner- more like crepes.
