Carrot Lentil Soup

Lentils are very high in folate and fibre and are a good source of vegetable protein
- 1 tbsp (15 mL) canola oil
- 3 carrots, sliced
- 2 onions, chopped
- 2 cloves garlic, minced
- 1 tbsp (15 mL) minced gingerroot
- 1 tsp (5 mL) ground cumin
- 1/2 tsp (2 mL) salt
- 1/4 tsp (1 mL) pepper
- 6 cups (1.5 L) vegetable stock or chicken stock
- 3/4 cup (175 mL) red lentils
- Garnish
- 2 tbsp (25 mL) chopped fresh coriander or parsley
- 1/2 cup (125 mL) plain low-fat yogurt
Cinnamon Toast Cupcakes

Mix cake mix, pudding mix, milk, oil, eggs, and 1 Tbl cinnamon
- CAKE
- 1 pkg (18.25 oz) yellow cake mix
- 1 pkg (3.4 oz) instant vanilla pudding mix
- 1 1/4 C milk
- 3/4 C vegetable oil
- 3 large eggs
- 1 Tbl + 1/4 tsp ground cinnamon
- 1 Tbl sugar
- CINNAMON CREAM CHEESE FROSTING
- 1 pkg (8 oz) cream cheese, softened
- 4 Tbl butter, softened
- 3 C powdered sugar
- 1 tsp ground cinnamon
Oreo Balls

Mix the crushed Oreos with the softened cream cheese
- 1 bag Oreos crushed
- 16 ozs. cream cheese softened
- 1 cup white chocolate melted
- 1 cup milk or dark chocolate melted
Chocolate Chip Cake

In mixer beat eggs, add yellow cake mix, instant pudding, oil and water
- 3 bars Hershey Chocolate (shave on large side of grater)
- 1/2 pkgs chocolate chips
- 1 box Ducan Heins Yellow Cake Mix
- Small box of vanilla instant pudding
- 2 eggs
- 1/2 cup oil
- 1 1/3 cups water
- Confectioner's Sugar
Christmas Marzipan Cake

Ok, ok I know it’s September and usually I wouldn’t be thinking of Christmas let alone beginning to bake for it...
- 100 ml orange juice
- 150 g sultanas
- 100 g raisins
- 100 g currants
- 50 g dried cranberries
- 50 g dried apricots, quartered
- 50 g dates, stoned & quartered
- 50 g glace cherries, halved
- 50 g mixed peel
- 110 g butter, softened
- 90 g muscovado sugar (or soft dark brown sugar)
- 2 eggs
- 250 g plain flour
- pinch of ground cinnamon
- pinch of nutmeg
- 1/2 tsp mixed spice
- 50 g flaked almonds
- 1 tsp almond extract
- 1 tbsp marmalade
- 1 tbsp black treacle (this gives the cake both taste & colour)
- 200 g marzipan cubed & frozen (you can find my recipe for it here)
- whole almonds for decoration
- Rum, brandy or whisky for glazing

Preheat oven to 350. In a small bowl, combine the cracker crumbs, sugar, and butter

- 8 tbsp. unsalted butter, at room temperature
- ¾ cup light brown sugar, packed
- 2 ¼ cup all-purpose flour
- 1 (14 oz.) can sweetened condensed milk
- 1 tsp. vanilla extract
- ½ cup mini semisweet chocolate chips
- 1 ½ lb. semisweet (or bittersweet) chocolate, coarsely chopped

Strawberry Shortcakes with Extra Creamy Cream Cheese filling

FOR THE CAKE: EQUIPMENT NEEDED: Shortcake pan, or mini bundt pan, if possible
- For the sponge cake:
- Cake
- 1 1/4 cups cake flour (5 ounces)
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon table salt
- 1 cup sugar (7 ounces)
- 5 large eggs (2 whole and 3 separated), room temperature
- 6 tablespoons unsalted butter , melted and cooled slightly
- 2 tablespoons water
- 2 teaspoons vanilla extract
- For the whipped strawberry filling*:
- 2 pounds fresh strawberries (medium or large, about 2 quarts), washed &dried
- 4 - 6 tablespoons sugar (to taste)
- 2 tablespoons Kirsch
- Pinch table salt
- 8 ounces cream cheese , room temperature
- 1/4 cup sugar
- 1/4 cup confectioner's sugar (this helps the whipped cream to stay a bit more stabilized)
- 1 teaspoon vanilla extract
- 1/8 teaspoon table salt
- 2 cups heavy cream
Garlic Lover's Pizza

If you love garlic, this is the pizza for you
- 1 head Roasted Garlic
- 1 tbsp olive oil
- 1 onion, chopped
- 1 cup shredded carrots
- 1/2 tsp salt
- 1/8 tsp pepper
- 1 (8 oz) package dairy-free, vegan, soy cream cheese, softened
- 1 Pizza Crust, prebaked and cooled
- 1 cup shredded dairy-free, vegan, mozerella cheese
Roasted Corn Relish

1. Preheat grill to high and place corn on hottest part of grill
- 2 ears of fresh corn, husked
- 1 pkg Compliments Sweet Bell Peppers (3 peppers), cut lengthwise with stems, seeds and cores removed
- 1 green pepper, cut lengthwise with stem, seeds and core removed
- 2 jalapeño peppers, tops cut off and seeds removed
