Individual Foil Packets of Grilled Garlic Potatoes

1. Preheat barbecue on medium-high heat
- 2 ½ lbs (1.25 kg) Yukon Gold potatoes,
- thinly sliced
- 1 tbsp (15 mL) chopped garlic
- ⅓ cup (75 mL) butter, cut into pieces
- Salt
Chocolate Chip Paradise Pie

Preheat oven to 325 degrees
- 1 1/2 cup butter, melted
- 3 cups firmly packed brown sugar
- 6 eggs
- 3 tsp. vanilla
- 3 cups flour
- 1 tsp. baking powder
- 1 cup chopped walnuts
- 1 cup coconut
- 2 cups milk chocolate chips
- caramel sauce
- hot fudge sauce
- more chopped walnuts (optional, I only had enough to make the pie but more to go on top would have been fabulous)
Oven Baked Apple Pancake

Heat oven to 450 degrees. Combine pancake mix, milk, eggs and 1 teaspoon sugar, mix well
- 3/4 c. pancake mix
- 1/2 c. milk
- 3 eggs
- 1/3 c. sugar
- 2 lg. cooking apples, thinly sliced
- 1/4 c. butter, melted
- 1/4 c. chopped pecans
- 1 tsp. cinnamon
Pumpkin Pie Cake

Preheat oven to 350°F (175 degrees C)
- 1 - 29 oz. can pumpkin puree
- 1 - 12 fluid oz. can evaporated milk
- 3 eggs
- 1 cup white sugar
- 1/2 tsp. salt
- 4 teaspoons pumpkin pie spice
- 1 - ( 18.25 oz.) package yellow cake mix
- 3/4 cup butter or margarine
- 1 cup chopped walnuts
Apple Cinnamon Rolls

1. In a large mixing bowl combine 2 1/4 cups of the flour and the yeast
- 4 1/4 to 5 1/4 cups all-purpose flour
- 1 package active dry yeast
- 1 cup milk
- 1/3 cup butter
- 1/3 cup granulated sugar
- 1/2 teaspoon salt
- 3 eggs
- 3/4 cup packed brown sugar
- 1/4 cup all-purpose four
- 1 tablespoon ground cinnamon
- 1/3 cup butter
- 1 cup finely chopped, peeled apple
- half and half or light cream
- 1 recipe vanilla glaze (below)

- 1 (6 oz) can gluten-free pineapple-orange juice, divided
- 2 tbsp olive oil
- 1 tbsp minced fresh ginger root
- 1/2 tsp salt

- 1 tbsp salt
- 2 live crabs, each about 750 g
- 1 to 2 lemons

Indian-Spiced Salmon with Basmati Rice

1. To prepare rice, bring 2 cups water to a boil in a small saucepan
- Rice:
- 2 cups water
- 1 cup uncooked basmati rice
- 1/4 teaspoon salt
- 3 tablespoons chopped fresh flat-leaf parsley
- 4 teaspoons roasted salted cashew pieces
- Salmon:
- 1/2 teaspoon ground ginger
- 1/2 teaspoon garam masala
- 1/2 teaspoon ground coriander
- 1/4 teaspoon ground turmeric
- Dash of kosher salt
- Dash of ground red pepper
- 4 (6-ounce) skinless salmon fillets

- 1 plain pastry base (I’m rubbish at pastry and buy a ready made base)
- 3 eggs
- 100 ml milk
- 1 bag of watercress, wilted
- 2 tsp of pesto
- big handful of feta cubes
