Cauliflower Cheese & Bacon Pie

I’ve been wanting to make a pie for a while, but never really got around to it
- 1/2 small cauliflower, cut into small florets
- 2 rashers of smoked back bacon, cut into small strips
- 3 spring onions, chopped
- 200 ml creme fraiche
- 100 g mature cheddar (I used Quickes cheddar)
- seasoning
- ready-made puff pastry
- egg, lightly beaten
Peanut Butter Banana Bread

Place a rack in the center of the oven and preheat to 350 degrees F
- 1 1/2 cups mashed ripe bananas
- 1/3 cup plain or vanilla fat free yogurt
- 1/3 cup creamy all-natural peanut butter
- 3 tablespoons butter, melted
- 2 large eggs
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 cup whole wheat flour
- 1/2 cup all-purpose flour
- 1/4 cup ground flaxseed meal (I’ve also baked this bread without the flaxseed meal… because I forgot to add it, and the bread was still moist and delicious)
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon ground allspice
- 1/4 cup chopped dry roasted peanuts
Lamb Chops with Spinach Biryani

Spinach Biryani: In large saucepan, heat oil over medium heat; cook onion until deep golden, about 8 minutes
- Spinach Biryani:
- 1/2 tsp (2 mL) salt
- 1/4 tsp (1 mL) ground cumin
- 1/4 tsp (1 mL) ground coriander
- 8 lamb loin chops
- 1 tbsp (15 mL) vegetable oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tbsp (15 mL) mild curry paste or medium curry paste
- 1/4 tsp (1 mL) salt
- 1/4 tsp (1 mL) pepper
- 1 cup (250 mL) basmati rice
- 1/4 cup (50 mL) raisins
- 1 cup (250 mL) sodium-reduced chicken broth
- 4 cups (1 L) chopped fresh spinach
- 1/4 cup (50 mL) toasted sliced almonds
Risotto Curry

Combining Italian and Indian cuisines, this recipe is a delightful change of pace
- 2 1/2 cups Vegetable Broth
- 1 tbsp olive oil
- 1 onion, chopped
- 1 cup chopped portabello mushrooms
- 1 cup Arborio rice
- 2 tsps Curry Powder
- 1/4 cup dry white wine
White Chocolate Kit Kat Blondies

1. Preheat oven to 350 degrees F
- 1/4 Cup butter
- 3/4 Cup white chocolate chips
- 1/2 Cup sugar
- 1/4 Cup packed brown sugar
- 1 Cup flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 Cup white chocolate chips
- 2 eggs
- 2 Tablespoons heavy cream
- 10 individual Kit Kat sticks
Chicken & Wild Rice Casserole

1. Evenly coat bottom of slow cooker with oil Microwave bacon on HIGH 1 minutes
- 3 tbsp olive oil
- 2 slices bacon, chopped
- 1 1/2 lbs chicken thighs, trimmed of excess skin
- 1/2 cup diced onion
- 1/2 cup diced celery
- 2 tbsp Worcestershire sauce
- 3/4 tsp salt
- 1/2 tsp dried sage
- 1/4 tsp black pepper
- 1 cup uncooked converted long grain white rice
- 1 package (4 oz) wild rice
- 6 oz cremini mushrooms*, quartered
- 3 cups hot chicken broth (enough to cover chicken)
- Additional salt and pepper (optional)
- 2 tbsp chopped fresh parsley
- *Substitute white button mushrooms if cremini mushrroms are not available
