Peas with Swiss Chard & Mint

Local peas are a season away, yet the frozen petit pois give a taste of what’s soon to come
- 1 large leek
- 1 large bunch Swss chard, preferably with
- colourful stems
- 2 tbsp (25 mL) butter or olive oil
- 2 tbsp (25 mL) all-purpose flour
- 1 cup (250 mL) chicken broth or water
- ¼ tsp (1 mL) salt
- ¼ tsp (1 mL) freshly ground black pepper
- 4 cups (1 L) tiny or small frozen peas
- 1 tbsp (15 mL) chopped fresh mint
Peanut Butter Banana Bread

1. There should be no rack above centre rack as banana bread rises fairly high
- Peanut Butter filling
- 2/3 Cup peanut butter
- 3 Tablespoon granulated sugar
- 1 Teaspoon vanilla
- 1 egg yolk
- 1/2 Cup chocolate chips
- Banana Bread
- 1 3/4 Cup all-purpose flour
- 2 Teaspoon baking powder
- 1/2 Teaspoon each baking soda and salt
- 1/2 Cup butter, melted and cooled
- 2/3 Cup granulated sugar
- 2 eggs
- 1 Cup mashed very ripe bananas, about 2 large
- 2 Teaspoon vanilla
Spicy Guacamole

Serve this creamy, nutty dip with corn or wheat tortilla chips, depending on which one you can eat!
- 3 ripe avocados
- 2 tbsp lime juice
- 1/2 tsp salt
- 3 tbsp chopped cilantro
- 1 ripe tomato
- 1/8 tsp cayenne pepper
- 3 drops Tabasco sauce

Preheat oven to 350°F. Butter 8x8x2-inch baking dish
- 16 1/4 * 16 1/4-inch-thick baguette slices, cut on slight diagonal
- 1 * 1 tablespoon butter
- 12 * 12 ounces fresh baby spinach leaves
- 1 * 1 pound sweet Italian sausage, casing removed
- 1 1/2 * 1 1/2 cups grated Fontina cheese, divided
- 3/4 * 3/4 cup diced drained roasted red peppers (from 12-ounce jar)
- 6 * 6 large eggs
- 1 * 1 cup heavy whipping cream
- 1 * 1 cup whole milk
- 1 * 1 teaspoon coarse kosher salt
- 1/4 * 1/4 teaspoon ground black pepper

- 350 g fruit beer (I like Sam Smith’s Raspberry Beer)
- 1 tsp fast action yeast (or 2 tsp fresh yeast crumbled)
- 500 g strong white bread flour
- 1 tbsp sweet almond oil (or a flavourless oil)
- handful of mixed dried fruit
- generous pinch of salt
Maple-Date Bars

Combine dates, water, and maple syrup in a heavy saucepan over medium heat
- 1 3/4 * 1 3/4 cups finely chopped pitted dates (about 12 ounces)
- 3/4 * 3/4 cup water
- 1/3 * 1/3 cup maple syrup
- 1 * 1 teaspoon grated lemon rind
- 2/3 * 2/3 cup sugar
- 1/2 * 1/2 cup butter, softened
- 1 * 1 cup all-purpose flour (about 4 1/2 ounces)
- 1 * 1 cup regular oats
- 1/4 * 1/4 teaspoon baking soda
- 1/4 * 1/4 teaspoon salt

Cranberry Wontons with Cranberry Jalapeno Jelly Dipping Sauce

TO MAKE JELLY: Combine cranberry juice cocktail, vinegar and jalapeños in saucepan
- JELLY
- 1 1/2 cups Ocean Spray® Cranberry Juice Cocktail
- 1 cup vinegar
- 2 to 4 jalapeño peppers, halved and seeded
- 5 cups sugar
- 1 3-ounce package liquid fruit pectin
- 5 tiny red hot peppers, optional
- WONTONS
- 1 8-ounce package cream cheese
- 3 tablespoons Ocean Spray® Sweetened Dried Cranberries
- 2 tablespoons chopped fresh chives
- 1/2 teaspoon grated fresh gingerroot
- pinch salt
- 24 wonton wrappers
- 1 egg white
Smoked Turkey Rice Salad

In saucepan, bring 2 cups (500 mL) water and salt to boil; add rice
- 1/4 tsp (1 mL) salt
- 1 cup (250 mL) whole-grain parboiled brown rice
- 1/4 cup (50 mL) sesame seeds
- 2 cups (500 mL) cubed smoked turkey thighs or ham
- 2 cups (500 mL) bean sprouts
- 1 sweet yellow pepper, diced
- 2 green onions, sliced
- 1/3 cup (75 mL) raisins, (optional)
- 8 leaves Boston leaf lettuce
- Dressing
- 1/3 cup (75 mL) orange juice
- 1 tbsp (15 mL) soy sauce
- 1 tbsp (15 mL) sesame oil
- 1 tsp (5 mL) grated gingerroot
- 1 clove garlic, minced
- 1 pinch pepper
- 1 pinch salt

- juice of 1 lemon
- 1 large red pepper
- 2 tbsp dark soy sauce
- juice of 1 orange
- juice of 1 lime

This moist quick bread might be perfect with a cup of tea but it’s even finer teamed with a tot of Drambuie
- 1 cup (250 mL) coarsely chopped pitted dates
- 1 cup (250 mL) boiling water
- 1 tsp (5 mL) baking soda
- 1 Earl Grey tea bag
- 2 cups (500 mL) all-purpose flour
