Crispy Cookie Bites

First, mix the 3 tablespoons of sugar with the cinnamon in a small bowl and set aside
- 3 tbsp. plus 1 cup sugar
- 1/2 tsp. cinnamon
- 1 cup vegetable or canola oil
- 3 large eggs
- 3 1/2 cups all-purpose flour
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1 tsp. vanilla extract
- 1 cup chopped almonds (or chocolate chips, raisins, chopped walnuts, other nuts or a combination)

- 250 g unsalted butter, softened.
- 140 g icing sugar, sifted.
- 1 teaspoon vanilla extract.
- 1 large free range egg yolk.
- 375 g plain flour, plus extra for dusting.
- Jam, I went for old school Strawberry but you can pick whatever flavour takes your fancy.
- A cookie cutter and something small to use to make the small hole in the middle of your biscuit (I used the top of a piping bag nozzle attachment!)

- 1/3 cup granulated sugar
- 1/3 cup powdered sugar
- 1/4 cup peanut butter chips
- 1/4 cup semi-sweet chocolate baking chips

1. Heat oven to 325 degrees F
- 3-1/2 cups all-purpose flour, plus more for dusting pans
- 1/2 teaspoon salt

- 2 cups sugar

The technique of shaping dough was simple and effective
- Dough
- 40 g fresh yeast
- 1 tbsp sugar
- 250 ml milk, lukewarm
- 2 egg yolks
- 50 g butter, melted
- 600-700 g flour
- Filing
- 100 g butter, softened
- 3 handfuls of raisins
- 10 tsp sugar
- Topping
- 150 g dark chocolate (at least 50% cocoa solids)
- 75 g butter
Grilled Portobello Mushrooms

This is a quick, easy recipe that will provide enough food for two
- 2 large portobello mushrooms
- Olive oil or vegetable oil spray
- Salt
- Pepper
- 2 teaspoons olive oil
- 1 cup finely chopped onions
- 3 cloves garlic
- 2 cups spinach, chopped
- 1/4 cup chopped walnuts
- 1/2 teaspoon freshly ground pepper
- 1/2 teaspoon dried marjoram
- 1/2 teaspoon dried rosemary
- 2 tablespoons white wine
Ratatouille Grilled Panini

1.Heat a grill or grill pan over medium heat
- 3/4 cup extra-virgin olive oil
- 2 large cloves garlic, crushed
- 1 eggplant, peeled lengthwise in 2 places to make stripes and sliced lengthwise 1/2 inch thick
