Sausage & Bean Casserole

Most weeks Hubby makes a sausage type casserole for his lunch
- 2 large leeks, sliced
- 1 garlic clove, minced
- 6 lemon & fennel sausages, each cut into 3
- 4 medium carrots, peeled and diced
- 5 flat cap mushrooms, sliced
- 500 ml passata
- 250 ml beef stock
- 1/2 cup of red lentils
- 1 tbsp Worcestershire sauce
- 1 can of cannellini beans (or naked beans as Hubby calls them !)
- 1 bay leaf
- 2 tsp thyme
- salt & pepper
Seafood Stir-Fry

1. Discard any skin from white fish, rinse lightly, and pat dry on paper towels
- 4 oz white fish, suck as monkfish fillet
- 2 sprays sunflower oil
- 1 fresh jalapeno chile, seeded and finely chopped
- 1 " piece of fresh ginger, peeled and grated
- 3 oz raw shrimp, peeled and deveined
- 4 oz baby corn, sliced in half lengthwise
- 4 oz snow peas, trimmed
- 6 scallions, trimmed and chopped
- 1 tbsp soy sauce
- 4 oz squid, cleaned and cut into thin slices
- 4 oz fresh spinach leaves
- 3/4 cup bean sprouts
Chunky Apple and Onion Soup

Celebrate the fall harvest by using local produce from farmer’s markets and creating a colourful chunky soup
- 1 tbsp (15 mL) canola oil
- 1 large sweet onion, thinly sliced
- 2 stalks celery, finely chopped
- 1 carrot, finely chopped
- 2 cloves garlic, minced
- 2 Crispin or Golden Delicious apples, peeled, cored and thinly sliced
- 1 tbsp (15 mL) chopped fresh sage or 1 tsp (5 mL) dried sage leaves, crumbled
- 2 tsp (10 mL) chopped fresh thyme
- or 1/2 tsp (2 mL) dried thyme leaves
- 1 small sweet potato, peeled and diced
- 4 cups (1 L) vegetable broth
- Salt and freshly ground pepper
LEMON-PEAR BREAKFAST BREAD

Preheat oven to 350°. Brush a 9" x 4" loaf pan with oil; line with parchment paper
- 1/2 cup Oil, plus 1 Tbsp for pan
- 2 cups Whole Wheat Flour
- 1 tsp Baking Soda
- 1 tsp Baking Powder
- 1/2 tsp Salt
- Zest of 1 Lemon
- 2 Large Eggs
- 1/2 cup Honey
- 1 cup Purchased Pear Puree
- 2 Tbsp Poppy Seeds
- 2 Ripe Pears, grated
Harvest Chutney

Place dried apples and pears in a large saucepan
- 1 cup dried apples, diced
- 1 cup dried pears, diced
- ½ cup golden raisins
- ¾ cup apple cider vinegar
- ½ cup brown sugar
- 1/3 cup minced mild onion
- ¼ teaspoon curry powder
- 1 teaspoon Garam Masala spice
- 1 clove garlic, finely minced
- 1 teaspoon cayenne pepper
- 2 teaspoon salt

Potato Salad

This is an old family recipe
- 7-8 large hard-boiled eggs, peeled
- 7-8 large cooked potatoes, cooled and diced
- 1 (4 oz) can black olives, sliced and drained
- 3 large dill pickles, chopped
- 4 stalks celery, chopped
- 1/2 cup green onions, chopped finely
- 1 cup mayonnaise
- 1 tablespoon dry mustard
- 2 tablespoons apple cider vinegar
- 3 teaspoons Salad Elegance seasoning (or salt, paprika and dried grated Parmesean Cheese)
- 2 teaspoons dried parsley
- Dash of paprika
- Salt and pepper to taste
Spiced Pecan Cake with Pecan Frosting

The famous Julie & Julia Cake
- 2 cups coarsely chopped pecans
- 1/4 cup, packed, light brown sugar
- 2 tablespoons ground cinnamon
- 1 teaspoon ground nutmeg
- 4 tablespoons unsalted butter, softened
- 2 tablespoons plus 2 teaspoons
- vanilla extract, in all
- 1 1/2 sticks [3/4 cup] unsalted butter
- 2 cups sugar, in all
- 3 cups sifted all-purpose flour
- 2 tablespoons baking powder
- 1 cup plus 2 tablespoons milk
- 3 egg whites
- Glaze (recipe follows)
- Pecan Frosting (recipe follows)
- Glaze: Combine 1 cup water and 1/2 cup sugar in small saucepan; bring
- to a boil. Remove from heat and stir in 1 teaspoon vanilla extract.
- Pecan Frosting
- 1 1/2 cups granulated sugar
- 3/4 cup water
- 8 egg yolks
- 3/4 pound (3 sticks) margarine,
- softened (see Note)
- 2 1/2 cups powdered sugar
- 4 1/2 teaspoons vanilla extract
- 2 1/2 cups coarsely chopped pecans,
- dry roasted until dark in color, cooled
- Note: It's best to use margarine rather than butter in this frosting because
- butter tends to melt out of the frosting as the cake sits awhile.
Lobster Mac N Cheese

1. Preheat oven to 350 degrees F
- 1 lb macaroni
- 2 1/2 cups milk
- 1 cup heavy cream
- 1 lb. lobster mushroom, chopped into chunks
- 4 Tbspn butter, plus more for buttering pan and saute-ing mushrooms
- 1 cup onion, finely chopped
- 1/4 cup flour
- 1/4 lb sharp cheddar, grated
- 1/4 lb fontina, grated
- salt
- freshly ground black pepper
- Tabasco or Sriracha (see Tip)
- freshly ground nutmeg
- meat from one ~1.5 lb. steamed lobster, chopped into chunks (see Tip)
- panko bread crumbs
- 1/4 lb cave-aged gruyere, grated
Apple Pie Baked in a Bag

Make the Crust: In a food processor combine the flour, sugar, and salt
- Crust:
- 2 * 2 cups all-purpose flour
- 1/4 * 1/4 cup sugar
- * Pinch salt
- 1 * 1 cup cold unsalted butter (2 sticks), cut into pieces
- 1/3 * 1/3 cup ice water
- Filling:
- 5 * 5 Granny Smith apples, peeled, cored, and thickly sliced
- 1/2 * 1/2 cup sugar
- 1 1/2 * 1 1/2 tablespoons cornstarch
- 1 * 1 teaspoon fresh lemon juice
- 1 * 1 teaspoon pure vanilla extract
- 1/4 * 1/4 teaspoon ground cinnamon
- 1/8 * 1/8 teaspoon salt
- 1/8 * 1/8 teaspoon ground nutmeg
- 1 1/2 * 1 1/2 tablespoons cold unsalted butter, cut into pieces
