Corn & Green Bean Filled Baked Sweet Potato

1. Preheat the oven to 375F
- 4 red-fleshed sweet potatoes, about 9 oz each
- 1 cup frozen fava beans
- scant 3/4 cup frozen corn kernels
- 4 oz fine long green beans
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- 5 oz tomatoes
- 2 tbsp torn fresh basil leaves, plus extra leaves to garnish
- pepper
Sweet Potato Salsa Pie

Preparation: Add meat to skillet; cook, stirring to break up any large pieces, until no longer pink
- Ingredients:
- 1 lb (500 g) extra-lean ontario ground beef or ground turkey
- 1 tbsp (15 mL) canola oil
- 1 cup (250 mL) coarsely chopped Ontario Onion
- 1 cup (250 mL) finely diced Ontario Carrot
- 1 cup (250 mL) grated peeled Ontario Rutabaga
- 2-3 cloves Ontario Garlic, minced
- 1/2 cup (125 mL) chopped greenhouse sweet red pepper
- 3/4 cup (175 mL) salsa or chili sauce
- 2 tsp (10 mL) paprika, smoked paprika is fabulous
- 1 tsp (5 mL) dried oregano
- Salt and pepper
- Topping:
- 2 cups (500 mL) mashed cooked Ontario Sweet potatoes
- 1 egg
White Chocolate Blondies

1.Preheat oven to 350 degrees F (175 degrees C)
- 8 ounces white chocolate, chopped
- 1 tablespoon vanilla extract
- 1/2 cup butter, softened
- 1 1/4 cups all-purpose flour
- 2 eggs
- 3/4 teaspoon salt
- 1/3 cup white sugar
- 1 cup semisweet chocolate chips
Moist Healthy Bran Muffin Recipe

Preheat the oven to 350 and grease the muffin pan
- 1 1/2 cups whole wheat flour
- 1 cup wheat bran
- 1/2 cup chopped walnuts (optional, although highly recommended)
- 1/2 cup raisins (optional, although highly recommended)
- 1 tsp grated orange peel (packed down semi-firmly)
- 2 1/4 cup almond milk/hemp/soy/rice
- 1/3 cup raw honey or agave
- 1 cup applesauce
- 1 banana
- 1 1/2 tbsp of baking powder
- 1/2 tbsp of baking soda
Scotch Pancakes

This morning I had a craving for Scotch Pancakes
- 135 g plain flour
- 1 tsp baking powder
- 1/2 tsp salt
- 2 tbsp caster sugar
- 130 ml milk
- 1 large egg
- 2 tbsp melted butter (allow to cool slightly)
- a good handful of sultanas/rasins
- zest of one lemon
BROWN RICE WITH ONIONS AND ROASTED RED PEPPERS

INSTRUCTIONS 1. Adjust oven rack to middle position; heat oven to 375 degrees
- INGREDIENTS
- 4 teaspoons olive oil
- 2 medium onions , chopped fine (about 2 cups)
- 1 cup low-sodium chicken broth
- 2 1/4 cups water
- 1 1/2 cups long-grain brown rice (see note)
- 1 teaspoon table salt
- 3/4 cup chopped roasted red peppers
- 1/2 cup chopped fresh parsley
- 1/4 teaspoon ground black pepper

- 110 g dark chocolate (min 70% cocoa)
- 110 g butter
- 120 g vanilla sugar (or caster sugar)
- 60 g plain flour
- 2 eggs
- glug of Baileys
- Cheesecake mixture
- 225 g cream cheese
- 40 g caster sugar
- 1 egg
- another generous glug of Baileys
Autumn Turkey and Pumpkin Lasagna

Begin by browning the turkey over medium heat with the olive oil
- 1 tbsp. olive oil
- 2 lbs. ground turkey
- 3/4 cup dried cranberries
- 1/2 cup dried apricots, chopped
- 2 bunches green onions, thinly sliced
- 7 oz. roasted chestnuts, chopped (These are usually jarred and can be found at most supermarkets this time of year)
- 1.5 tbsp. smoked paprika (spicy if you’ve got it)
- 1 tbsp. coarse salt
- 2 tbsp. fresh sage leaves, sliced (about 15 leaves)
- 2 15 oz. cans pureed pumpkin (NOT Pumpkin Pie filling!!)
- 8 oz. ricotta cheese
- 1 tsp. ground cardamom
- 16 oz. (2 boxes) Whole Wheat lasagna, cooked
- 1.5 cups shredded mozzarella cheese
- 5 sage leaves for garnish
