White Bean and Tomato Bruschetta

- 1 baguette, thinly sliced
- 3 tbsp (45 mL) extra virgin olive oil
- 1 clove garlic, halved
- 1 can white kidney beans, 540 mL,
- drained and rinsed
- 2 tbsp (25 mL) extra virgin olive oil
- 4 tsp (20 mL) sherry vinegar
- 1 tbsp (15 mL) chopped fresh
- sage leaves
- 1 clove garlic, minced
- 1 ⁄4 cup (50 mL) finely chopped
- sun-dried tomatoes in oil, drained
- 3 tbsp (45 mL) toasted pine nuts
- Sea salt and freshly ground
- black pepper
- Topping
- 1 cup (250 mL) quartered grape tomatoes
- 1 ⁄2 cup (125 mL) watercress leaves
- or chopped baby arugula leaves
- 1 tbsp (15 mL) extra virgin olive oil
White-Bean and Walnut Burgers

1. Turn on the food processor, then drop in garlic through thespout and whirl until puréed
- 1 garlic clove
- 1/2 cup packed parsley leaves
- 1/2 cup toasted walnuts
- 540-mL can white kidney or navy beans, very well rinsed and drained
- 2 eggs
- 3/4 cup panko bread crumbs
- 1/3 cup minced green onions, about 2
- 2 tbsp olive oil
- 1/4 tsp salt
- zest of 1 lemon
- 1 loaf herbed focaccia (optional)
- balsamic vinegar for drizzling
- fresh basil leaves (optional)
Organic Cheese Frittata Primavera

1. Heat olive oil in 10 inch (25 cm) non-stick skillet over medium heat
- 2 tsp Organic Extra Virgin Olive Oil
- 1/2 Organic red onion, small, sliced
- 2 tsp Organic garlic, jarred, minced
- 1 cup Organic Carrots, peeled and sliced
- 1 cup Organic Broccoli, florets
- 1 cup Organic zucchini, chopped
- 1/2 cup Organic tomatoes, chopped
- 8 Compliments Organic Eggs, large
- 1 cup Compliments Organic Medium Cheddar Cheese, shredded
- Salt and pepper to taste
Spanish Rice

With big boys to keep fed through the years, I found this recipe combined with burritos a quick, hearty meal
- 1/2 large red onion, chopped finely
- 1/2 large red bell pepper, chopped finely
- 1/4 large green bell pepper, chopped finely
- 2 cloves garlic, chopped finely
- 1 large stalk celery, chopped finely
- 1/2 teaspoon ground cumin (can use less if desired)
- 1/4 teaspoon dried oregano
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon sea salt
- 1/2 cup diced tomatoes
- 1/2 cup tomato sauce
- 1 cup chicken or vegetable broth
- 1 tablespoon olive oil
- 2 cups basmati white rice
- 3 cups water
Sluttishly Easy: Apple & Olive Oil Cake

Olive oil isn't an obvious cake ingredient, but used as a substitute for butter it can make a lovely moist crumb
- A 20cm cake tin, baking parchment and melted butter for greasing
- 80 g sultanas
- 280 g plain flour
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1/2 tsp baking powder
- 1 1/4 tsp bicarbonate of soda
- 120 ml olive oil
- 160 g caster sugar
- 1 tsp vanilla extract
- 2 medium eggs, plus 2 medium egg whites
- 3 cooking apples
- Zest of one lemon
- Icing sugar, for dusting
Tomato Sauce

Many commercial varieties of tomato sauce have milk protein and or gluten to help add body and thicken the sauce
- 2 tbsp extra-virgin olive oil
- 1 large onion, chopped
- 4 cloves garlic, chopped
- 1 tbsp minced ginger root
- 1/4 tsp salt
- 1/8 tsp white pepper
- 1 (6 oz) can gluten-free tomato paste
- 1 cup tomato juice
- 1 cup dry red wine
- 4 large tomatoes, chopped
Chicken Roasted with 40 cloves of Garlic

Wipe chicken inside and out with damp paper towel
- Ingredients:
- 1 roasting chicken (about 5 lb/2.5 kg)
- Half lemon
- salt and pepper
- 3 tbsp (50 mL) olive oil
- 40 cloves Ontario Garlic, unpeeled (4 to 5 heads)
- 1/2 tsp (2 mL) each of dried thyme and crushed dried sage
Brandied Sweet Potatoes

- 4 large sweet potatoes
- 2 tbsp (30 mL) each orange marmalade and butter
- 1 tbsp (15 mL) brandy (optional)

- 1 roll (16.5 oz) Pillsbury® refrigerated chocolate chip cookies
- 1 cup quick-cooking oats
- Dash salt, if desired
- 2/3 cup SMUCKER'S® Caramel Ice Cream Topping
- 5 tablespoons all-purpose flour
- 1 teaspoon vanilla

- ½ pack of raw stir fry vegetables
- 6 tbsp chinese-style sauce (eg Hoi Sin, Sweet Chilli, Soy etc…)
- 1 egg, beaten
- Sesame seeds for decoration (optional)
