Marbleous Chocolate-Peanut Butter Cake with Carmel Glaze

1. Preheat oven to 350F. Lightly spray 10-inch fluted tube pan with cooking spray; set aside
- 2 cups all-purpose flour
- 4 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/8 tsp. ground cinnamon
- 1/2 cup unsalted butter, softened
- 1 1/4 cups granulated sugar
- 2 eggs
- 3/4 cup sour cream
- 1 tsp. pure vanilla extract
- 1/3 cup milk
- 3 oz. bittersweet chocolate, melted
- and cooled
- 1/2 cup creamy peanut butter
- 1 recipe Salted Caramel Glaze, right
- Sea salt (0ptional)
Paprika Roasted Cauliflower

A quick toss in paprika packs extra colour and flavour in ordinary cauliflower
- 3 tbsp (45 mL) extra-virgin olive oil
- 1/2 tsp (2 mL) smoked paprika or paprika
- 1/4 tsp (1 mL) salt
- 1 head cauliflower, (about 3 lb/1.5 kg)
Homemade Meat Pie

1. Preheat oven to 350 degrees F (175 degrees C
- 1 pound ground beef
- 1 onion, chopped
- 1 (10.75 ounce) can condensed vegetable beef soup, undiluted
- 1 (10.75 ounce) can condensed cream of mushroom soup
- 3 potatoes, peeled and cubed
- 4 carrots, sliced
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 recipe pastry for a 9-inch double crust pie
Banana & Caramel Cheeseless Yoghurt Cheesecake

This cheeseless cheesecake was a bit of an experiment
- 190 g digestive biscuits
- 75 g butter
- 500 g full fat Greek yoghurt (I used Total)
- 50 g caster sugar
- 2 eggs
- 2 tbsp cornflour
- 50 ml double cream
- 1 tsp cinnamon
- 3 bananas
- ½ tin (180g) dulce de leche caramel
Olive Herb Pull aparts

1. Preheat oven to 400. Coat large nonstick baking sheet with nonstick cooking spray
- 1 pkg. (12 oz.) refrigerated flaky buttermilk biscuits
- Olive oil cooking spray
- 2 1/2 tbsp. olive oil
- 4 cloves of garlic
- 1/4 tsp. red pepper flakes
- 1 - 2 medium onions, very thinly sliced
- 1/2 can black olives, drained and sliced
- 1/2 cup shredded or chopped basil
- 2 teaspoons chopped fresh rosemary
- 1 oz. feta cheese crumbled
Simple Melon Salsa

Although prettiest with a combo of melons, this salsa will still taste delicious if you only use one
- 1 1⁄2 cups (375 mL) colourful melon,
- preferably a mix of watermelon,
- cantaloupe and honeydew, cut into
- 1 ⁄2 inch (1 cm) pieces
- 1 small yellow or orange pepper
- 1 jalapeño pepper
- 2 tbsp (25 mL) lime juice
- 2 tsp (10 mL) olive oil
- 1 ⁄4 tsp (1 mL) salt
- 2 tbsp (25 mL) finely chopped
- coriander, basil or snipped chives
