Maple Apple Bread

* In a bowl, combine brown sugar, flour, cinnamon, egg and flavoring; mix well
- GLAZE:
- 1/4 * 1/4 cup packed brown sugar
- 2 * 2 tablespoons all-purpose flour
- 1 * 1 teaspoon ground cinnamon
- 1 * 1 egg, beaten
- 1 * 1 teaspoon maple flavoring
- 1/2 * 1/2 cup chopped peeled tart apple
- 1/4 * 1/4 cup chopped walnuts
- 2 * 2 packages (8 ounces each) refrigerated crescent rolls

- 1/2 * 1/2 cup confectioners' sugar
- 1 * 1 tablespoon milk
- 1/2 * 1/2 teaspoon Spice Island® Pure Vanilla Extract
Baileys Coffee Cream Pots

Hubby doesn’t like coffee so rarely do I cook with it, even if it is one of my favourite ingredients
- 5 egg yolks
- 80 g caster sugar
- 260 ml milk
- 260 ml double cream
- 5 tsp instant coffee granules
- 100 ml Baileys with of hint of Coffee (or normal Baileys)
Queen of Puddings

Every month Rosie from Rosie Bakes a “Peace” of Cake, runs a blog event based around great British puddings
- 35 g fresh breadcrumbs, made for day old bread
- 13 g butter
- Grated rind of quarter of a lemon
- 50 g caster sugar
- 1 large egg – separated
- 1/4 pt of milk (both whole and semi-skimmed work)
- 4 tsp raspberry jam – heated through
Cookies and Cream Cupcakes

Preheat the oven to 350˚ F
- For the cupcakes:
- 24 Oreo halves, with cream filling attached
- 2 ¼ cups all-purpose flour
- 1 tsp. baking powder
- ½ tsp. salt
- 8 tbsp. unsalted butter, at room temperature
- 1 2/3 cup sugar
- 3 large egg whites, at room temperature
- 2 tsp. vanilla extract
- 1 cup milk
- 20 Oreo cookies, coarsely chopped (I quarter them)
- For the frosting:
- 8 oz. cream cheese, at room temperature
- 6 tbsp. unsalted butter, at room temperature
- 1 tbsp. vanilla extract
- 4 cups confectioners’ sugar, sifted
- 2 tbsp. heavy cream
- For garnish:
- Oreo cookie crumbs
- 24 Oreo cookie halves
Veggie Enchiladas

Cooking vegetables until they brown caramelizes the sugars, creating rich and complex flavour
- 1 tbsp olive oil
- 1 onion, chopped
- 1 (8 oz) package sliced mushrooms
- 2 yellow summer squash, chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 (17 oz) can sweet potatoes, drained
- 1 tsp dried basil leaves
- 1 tsp dried thyme leaves
- 1/2 tsp salt
- 1/8 tsp pepper
- 1/2 cup Vegetable Broth
- 3 cups Tomato Sauce
- 2 tbsp Taco Seasoning Mix
- 12 (6") corn tortillas
- 2 cups shredded, dairy-free, vegan Cheddar

1. Preheat oven to 350 and butter a 9x13 inch baking dish
- 1/4 cup shortening
- 1/2 stick butter at room temperature
- 1 cup granulated sugar
- 1 whole egg
- 2 eggs, separated
- 1 1/2 cups flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup chopped nuts (I used pecans)
- 1 cup mini marshmallows
- 1/2 cup chocolate chips
- 1 1/2 cup light brown sugar
- 1 egg white
Lemon-Garlic Chicken

1. Trim excess fat from skin (this will prevent flare-ups)
- 8 skin-on, bone-in chicken pieces
- 1/2 cup lemon juice (about 2 lemons)
- 3 tbsp olive oil
- 1 tbsp each garlic powder and dried oregano leaves
- 11/2 tsp each dried basil and pepper
- 1/2 tsp salt
Blue Ballet Squash Honey Drizzle Cake

This year I have well documented the plight of the Blue Ballet Squashes in the garden
- 180 g self-raising flour
- 90 g light soft brown sugar
- 90 g golden caster sugar
- pinch of mixed spice
- pinch of grated nutmeg
- 1/2 tsp cinnamon
- 1/2 tsp baking powder
- zest and juice of 1 orange
- 180 g butter, melted
- 2 eggs
- 300 g squash, peeled, deseeded and grated/finely diced
- 75 g walnuts, chopped
- 50 g sultanas
- 1 tbsp lemon juice
- 5 tbsp honey
Banana Bread Waffles

In a small bowl, whisk together the melted butter, warm milk and vanilla extract
- 4 tbsp. unsalted butter, melted
- 1 cup plus 2 tbsp. warm milk
- 1 tsp. vanilla extract
- 2 cups all-purpose flour
- 1 tbsp. brown sugar
- 1 ½ tsp. yeast
- ½ tsp. salt
- ½ tsp. ground cinnamon
- ¼ tsp. ground nutmeg
- Dash of ground ginger
- Dash of ground clove
- 2 eggs, lightly beaten
- 1 cup mashed ripe bananas (about 3 whole bananas)
- 2 tbsp. sour cream or Greek yogurt
