CHICKEN FRIED STEAK WITH COUNTRY GRAVY

1. Heat olive oil and butter in a large non-stick skillet over medium heat
- STEAKS:
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 cup all purpose flour
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper
- 1 large egg
- 1/4 cup water
- 2 pounds cube steak
- COUNTRY GRAVY:
- 3 tablespoons butter
- 4 tablespoons all purpose flour
- 1-1/2 cups beef broth
- 1 cup milk
- Salt and pepper to taste
INDONESIAN-STYLE RIBS

If you can't find kecap manis, boil together 1/2 cup granulated sugar 1/3 cup soy sauce 2 Tbsp
- SWEET AND SPICY SAYCE:
- 3 to 4 lb. pork back or side ribs
- 3 cloves garlic, minced
- 2 Tbsp. ground or finely minced fresh lemongrass
- 2 Tbsp. fish sauce
- 1-1/2 Tbsp. minced fresh coriander
- 2 Tsp. finely grated gingerroot
- 2 Kaffir lime leaves, centre vein removed, minced, or 1/2 Tsp. finely grated lime rind
- 1/4 cup coarsely ground roasted peanuts
- 1/4 Cup peanut oil or vegetable oil
- 1/3 cup sliced shallots
- 5 cloves garlic, sliced
- 4 Tsp. minced Thai (bird's eye) chillies or other hot peppers
- 1/2 cup sweet soy sauce (kecap manis)
- 1/3 cup lime juice
BALSAMIC HONEY PORK TENDERLOIN

In a large bowl, combine honey, mustard, vinegar, oil, garlic, salt and pepper; add pork, turning to coat
- 2 tbsp. liquid honey
- 2 tbsp. grainy mustard
- 2 tbsp. balsamic vinegar
- 1 tbsp. olive oil
- 1 clove garlic, minced
- 1/4 tsp. each salt and pepper
- 2 pork tenderloin
LAYERED LETTUCE SALAD

Cover and refrigerate 8 – 12 hours
- 1/2 head lettuce, bite size
- 1 cup celery chopped
- 4 sliced, hard boiled eggs
- 1 – 10 oz. frozen green peas (uncooked)
- 1/2 cup diced green pepper or red pepper
- 1 sliced medium onion
- 8 slices of bacon, cooked and diced
- 2 cups mayonnaise with 2 tbsp. sugar (mixed)
- 4 oz. of grated cheese
CRUNCHY HONEY GARLIC PORK CHOPS OR CHICKEN

- GLAZE:
- 6-9 pork chops or chicken
- 2 eggs
- 4 tablespoons water
- 2 cups flour
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon garlic powder
- Canola or vegetable oil for frying
- 1-1/2 cups honey
- 1/2 cup brown sugar
- 1/2 teaspoon ginger
- dash pf cayenne pepper
- 1/2 cup soy sauce
- 1 tablespoon chopped garlic
- 2 tablespoons butter
ULTIMATE SEAFOOD CHOWDER

In a kettle, or dutch oven, fry bacon
- 4 slices bacon, diced
- 1 cup diced onions or more
- 1 cup diced celery or more
- 1 cup diced potatoes
- 1 can (6-1/2 oz.) clams or 3/4 lb. clams
- 1/2 lb. shrimp or 3/4 lb. shrimp
- 1 lb. crab
- 2 - 3 cups milk (more or less)
- Salt, pepper, seafood seasoning to your taste
- 3 tbsps cornstarch
- 1 stick butter (1/2 cup)
SOUR CREAM COFFEE CAKE

- CRUMB MIX:
- 1/2 cup butter , softened
- 3/4 cup sugar
- 3 large eggs
- 1 tsp vanilla
- 2 cup all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup low-fat sour cream
- 1 cup bron sugar
- 2 tsp ground cinnamon
- 6 tbsp butter
- 3/4 cup chopped walnuts or pecans
CHICKEN CURRY - HONGKONG STYLE

Heat a large wide frying pan over medium-high
- 2 tbsp. vegetable oil
- 1 onion, sliced
- 2 tbsp. curry powder
- 8 skinless, boneless chicken thighs
- 1/2 tsp. salt
- 1 can (398 ml) coconut milk
- 2 large carrots, sliced into coils
- 2 medium potatoes, peeled, cut into 1/2-inch chunks
- 1 cup frozen peas
- 1/2 cup chopped cilantro
GRILLED CABBAGE

1 Cut cabbage into four wedges
- Spice mix:
- 1 head cabbage
- 4 teaspoons butter
- 4 slices bacon
- 1 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon pepper
