PICKLED BEETS (FOR CANNING)

1. In a large pot cook the unpeeled beets until fork-tender (do not overcook) cool and then remove the skins
- 30 - 40 small beets, unpeeled
- 2 cups sugar
- 2 cups water
- 2 cups white vinegar
- 1 teaspoon ground cloves
- 1 teaspoon allspice
- 1 tablespoon cinnamon
- 1 teaspoon whole cloves
POTATOES AND ONION DISH

Wash and slice new potatoes in 1/4"
- SAUCE:
- 4 medium new potatoes, slice 1/4 thick
- 3 small onions, sliced
- 1/4 tsp pepper
- 3/4 tsp salt
- 1/2 tsp celery seed
- 1/2 tsp garlic powder
- 1/2 cup melted butter
- Mix all together.
CORN, TOMATO & CUCUMBER SALAD

Mixed basil, oil, lime juice sugar, salt and pepper
- 1/4 cup minced fresh basil
- 3 tbsp. olive oil
- 2 tsp. lime juice
- 1 tsp. sugar
- Salt and Pepper
- Frozen corn (thawed) at least 2 cups
- Grape or cherry tomatoes, halves, 1 cup
- Cucumber, skinned and seeded, cut into cubes, 1 cup
PAPAYA & SHRIMP SALAD WITH CURRY MAYONNAISE DRESSING

- 1 Butter Lettuce
- Cooked Shrimp
- Papaya, sliced
- DRESSING:
- 1 Cup Mayonnaise
- 1/4 tsp. ground ginger
- 1/2 - 1 tsp. curry powder
- 1 tbsp. lime juice
- 1 tsp. liquid honey
POTATO BACON CHEDDAR TART

1. Preheat oven to 325 degrees
- 3 Baking potatoes, sliced one quarter inch thick
- 1 pound of thickly sliced bacon
- 1 pound of orange cheddar cheese, grated
- Salt and pepper
PICKLED EGGS (SUSAN)

Mixed all ingredients except eggs and crushed red pepper flakes
- 1 dozen eggs
- 1/2 teaspoon sea salt
- 1 onion, sliced
- 1 tablespoon pickling spice
- 2 cups vinegar
- 2 cups water
- 1/3 cup sugar
- Crushed red pepper flakes
Texas Style Chicken Tequila

“This dish is colorful and the ingredients prepared ahead of time
- 3 tablespoons unsalted butter, divided
- 2 tablespoons chopped garlic
- 2 tablespoons finely chopped jalapeno pepper
- 1/2 cup chicken stock
- 1/4 cup tequila
- 3 tablespoons lime juice
- 3 tablespoons soy sauce
- 4 skinless, boneless chicken breast halves - cut into cubes
- 1 tablespoon cooking oil
- 1/4 medium onion, thinly sliced
- 1/2 medium red bell pepper, thinly sliced
- 1 medium green bell pepper, thinly sliced
- 1 1/2 cups heavy cream
- 1/4 cup chopped fresh cilantro
- 1/3 cup freshly grated Romano cheese
BERNAISE SAUCE

In a sauce pan reduce wine with 1 tablespoon chopped tarragon to 1/4 cup of liquid
- 1 bottle white wine
- 3 tbsps chopped fresh tarragon, divided
- Juice on one lemon, divided
- 6 egg yolks
- 1 pound butter, melted
- Salt and pepper to taste
STEAK SPICE RUB

- 2 tbsp cracked black pepper
- 1 tbsp dehydrated onion powder
- 1 tbsp dehydrated garlic powder
- 1/2 tbsp crushed red chili
- 1/2 tbsp thyme
- 1/2 tbsp rosemary
- 1/2 tbsp fennel seeds
- 1 tbsp dried porcini mushroom, crushed
