BLUEBERRY MUFFINS

Preheat oven to 400 degrees F
- 1-1/2 cups all purpose flour
- 3/4 cup white sugar
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1/3 cup vegetable oil
- 1 egg
- 1/3 cup milk
- 1 cup fresh blueberries
- 1/2 cup white sugar
- 1/3 cup all-purpose flour
- 1/4 cup butter, cubed
- 1-1/2 teaspoons ground cinnamon
MANDARIN ORANGE SALAD

Mix together Cool Whip and Instant vanilla pudding (do NOT make the pudding, just use it dry)
- 1 pkg Vanilla Instant Pudding Mix (use dry) I would use sugar free
- 1 Large can Crushed Pineapple (undrained)
- 2 Medium/Large cans Mandarin Oranges (drained)
- 1 pkg Cool Whip 8 oz ( and you could use fat free)
EASY BEEF STRAGANOFF

Sprinkle beef strips with ½ tsp salt and ¼ tsp
- 1 lb. boneless sirloin beef, cut into strips
- Salt and pepper
- 2 tbsp. butter, divided
- 4 cups sliced mushrooms
- 1 onion, chopped
- 1 tbsp. paprika
- 3 tbsp. all-purpose flour
- 4 cups milk
- 1 cup beef stock
- 2 tbsp. Dijon mustard
- 4 cups curly broad noodles (250 g)
- 2 cups frozen peas or mixed vegetables, thawed
- 1 cup sour cream (light or regular)
- Chopped fresh dill or parsley
SWEET POTATO SUPREME

GREAT WITH HAM!!!!!
- 2 cups mashed, cooked sweet potatoes
- 2 tbsps cream or milk
- 2 tbsps melted butter
- Scant teaspoon salt
- 1/4 tsp paprika
- 1/2 cup brown sugar, packed - cut down on this
- 1/2 cup butter
- 1 cup (approximately) pecan halves, to cover casserole
CUSTARD CAKE

FOR THE BATTER: 1. Mix together the flour and baking powder
- CUSTARD:
- 2-1/2 cups cake flour
- 1 tbsp baking powder
- 7 egg yolks
- 1/2 cup sugar
- 1/2 cup orange juice
- 1/2 cup oil
- 1/2 cup warm water
- 1 can evaporated milk
- 1 cup sugar
- 5 egg yolks (beat till soth with hands)
- 1/2 tsp lemon extract.
- Mix the egg yolks, milk, sugar and set aside.
- MERENGUE:
- 12 egg whites
- 1 tsp cream of tartar
- Beat till thick and add 3/4 cups sugar gradually.
- Pour the batter mixture and fold.
- CARAMEL:
- 1 cup sugar
- Cook in low fire till it melts and add 1 cup water and let boil till it gets thick.
PORK AND SWEET POTATO SKILLET

In bowl: Stir together pork, soy sauce, thyme, ginger, pepper, allspice and cayenne; let stand for 5 minutes
- 1 lb. pork tenderloin, trimmed and cut in 1-inch cubes
- 1 tbsp sodium-reduced soy sauce
- 1 tsp thyme
- 1/2 tsp ground ginger
- 1/4 tsp pepper
- Pinch each allspice and cayenne pepper
- 2 tbsps vegetable oil
- 1 small sweet potato, peeled, halved and cut in 1/4-inch thick slices
- 1 onion, diced
- 2 cloves garlic, minced
CANDIED SMOKED SALMON

Here is a delicious smoked salmon made memorable with brown sugar, red wine, dark rum and maple syrup
- CANDY GLAZE:
- Salmon
- 2 to 4 cups Demerara or Natural Brown Sugar
- 7/8 cup coarse salt (Kosher Salt) (no more than one cup)
- SET ASIDE FOR LATER (optional)
- crushed garlic (8 cloves)
- crushed peppercorns (small palm full)
- grated fresh ginger (2 teaspoons)
- grated zest of 1 orange
- red chili flakes (1/2 teaspoon)
- cayenne (1/2 teaspoon)
- DO NOT ADD ANY LIQUID SEASONINGS A THIS COULD COMPROMISE THE SALT/SUGAR RATIO...HOWEVER I PERSONALLY HAVE SNUCK IN ABOUT 4 OZ OF DARK RUM INTO THE BRINE.
- 4 oz. red wine
- 4 oz. dark rum
- 2 cups brown sugar
- 1 cup honey or maple syrup
- pepper/cayenne (optional)
ONION PIE

Place crackers in 12" pie plate
- 1-1/2 cups crushed Ritz Crackers
- 2-1/2 cups thinly sliced onions (sweet onions)
- 1/2 cup butter
- 1-1/2 cups of milk
- 4 eggs
- 1 - 2 cups grated sharp cheddar cheese (200 grams)
- Black Pepper
SPAGHETTI CASSEROLE

Preheat the oven to 350 degrees F
- Spaghetti sauce ingredients:
- 8 ounces cream cheese
- 1/4 cup sour cream
- 1 cup cottage cheese
- 1/2 cup butter
- 1 (16 oz) package spaghetti
- 8 ounces grated cheddar cheese
- 1 lb ground beef
- 1/4 cup grated onion
- 2 tablespoons butter
- 1/4 teaspoon dried oregano
- 1/2 teaspoon salt
- 2 garlic cloves (crushed)
- 1 (28 ounce) can crushed tomatoes
- 1/4 teaspoon sugar
- 1 tablespoon olive oil
- 2 tablespoons fresh basil (chopped)
CHICKEN AND BACON CASSEROLE

Pre-heat oven to 350. Cut bacon into 1" pieces and fry until mostly crisp
- 3 lbs boneless skinless chicken breasts
- 1 ⁄2 lb bacon
- 2 cups broccoli
- 8 ounces provolone cheese, shredded
- 1 cup chicken broth
- 1 ⁄4 cup heavy cream
- 1 ⁄4 cup Dijon mustard
- 1 teaspoon oregano
- 1 teaspoon basil
