CHEESY BAKED ASPARAGUS

Line a baking sheet with some tinfoil
- 1 bunch of asparagus, woody ends trimmed...
- 3 T. butter, melted
- 1/2 tsp. my house seasoning (equal parts garlic powder, onion powder and pepper...combine and store in an airtight container)
- 1 T. grated parmesan cheese
- 3/4 C. shredded mozzarella cheese
- italian seasoning
CHEESY CABBAGE AND GROUND BEEF SKILLET

Brown the ground beef in a skillet over med
- 1 lb. ground beef
- 1 med. onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 T. worcestershire sauce
- 1 T. my house seasoning (equal parts garlic powder, onion powder and black pepper...combine and store in an airtight container)
- 10 oz. can diced tomatoes with green chilies, undrained
- 10 oz. beef broth (I used the empty tomato can to measure)
- 3 C. chopped cabbage
- 1 C. shredded extra sharp cheddar cheese (or more if you like)
NASI GORENG

This is an Indonesia's version of fried rice
- 1 tbsp. olive oil
- 3 eggs, beaten
- 1 onion, chopped
- 1 leek 9white and light green parts only, thinly sliced
- Half sweet red pepper, thinly sliced
- 3 cloves garlic, minced
- 1 tsp each ground cumin and ground coriander
- 1 tsp Asian chili paste (such as sambal oelek)
- 8 oz boneless skinless chicken thighs, cubed
- 8 oz frozen medium shrimp, thawed, peeled and deveined
- 4 cups cooked rice
- 3 tbsp. kecap manis
- 2 tsp white vinegar
- 1/4 tsp salt
- 3 cups fresh spinach leaves, coarsely chopped
BEEF AND BROCCOLI

Cut the beef across the grain into thin slices
- • Marinade:
- • 3/4 pound lean beef
- • 1 tablespoon rice vinegar (substitute rice wine if desired) or dry sherry
- • 1 teaspoon sugar
- • 1 teaspoon soy sauce
- • 1 tablespoon water or beef broth
- • 1 tablespoon cornstarch
- • Sauce:
- • 2 tablespoons oyster sauce
- • 1 tablespoon light soy sauce
- • 1 tablespoon dark soy sauce
- • 1 tablespoon beef broth
- • Thickener:
- • 1 teaspoon cornstarch mixed with 1 tablespoon water
- • 1 pound fresh broccoli
- • 2 garlic cloves and ginger
- • To Cook Broccoli:
- • 1/2 cup water or beef broth
- • 1/4 teaspoon salt, or to taste
- • 1/2 teaspoon sugar, or to taste
- • Other:
- • 1 1/4 cups oil, or as needed
PISTACHIO SALAD

1. Drain the crushed pineapple and reserve the juice, set both aside
- 8 ounces cool whip
- 8 ounces cream cheese, softened
- 1 (3.4 ounces) box pistachio pudding
- 1 (20 ounce) can crushed pineapple (in juice, not syrup)
- toasted coconut, if desired
SALSA (SANDY)

Bring to boil. Simmer for 5 minutes
- 16 16 16 cups chopped peeled tomatoes
- 2 2 2 cups chopped green peppers
- 2 2 2 cups chopped onions
- 1 1 1 chopped Jalapeno Peppers
- 4 4 4 cloves garlic, minced
- 4 5 4 5 4 - 5 Teaspoons Chili Powder (you can cut down on this)
- 2 2 2 Tablespoons powdered red peppers (you can cut down on this)
- 4 4 4 Tablespoons canning salt
- 1 1 1 cup vinegar
- 3/4 3/4 3/4 cup sugar
BISCUIT AND GRAVY CASSEROLE

Preheat oven to 350 degree's
- 1 pound sausage
- 1 1/2 ounces pork gravy mix ( 1 package of Pioneer Brand Peppered Sausage Gravy Mix )
- 1 cup cheddar cheese, shredded
- 6 eggs
- 1/2 cup milk
- to taste salt
- to taste black pepper
- 1 Can (8 oz) biscuits ( 1 can Pillsbury Grands Biscuits )
GRILLED CORN, AVOCADO & TOMATO SALAD

Remove husks from corn and grill over medium heat for 10 minutes
- 1 pint grape tomatoes
- 1 ripe avocado
- 2 ears of fresh sweet corn
- 2 tbsp fresh cilantro, chopped
- HONEY LIME DRESSING
- Juice of 1 lime
- 3 tbsp vegetable oil
- 1 tbsp honey
- Sea salt and fresh cracked pepper, to taste
- 1 clove garlic, minced
- Dash of cayenne pepper
BAKED GENERAL TSO CHICKEN

Move one of the oven racks to the upper-middle part and preheat oven to 450 degrees
- 1 pound boneless, skinless chicken breasts, cut into 2-inch chunks
- 1/4 cup all-purpose flour
- 2 large egg, beaten
- 2 cups crushed corn flakes
- For the sauce
- 3/4 cup chicken broth
- 1/2 tablespoon tomato paste
- 2 tablespoons soy sauce
- 1 tablespoon hoisin sauce
- 1 1/2 teaspoon sriracha sauce
- 3 tablepoons rice vinegar
- 1 1/2 tablespoons granulated sugar
- 2 tablespoons corn starch mixed with 2 tablespoons water
- 1 teaspoon toasted sesame oil or regular sesame oil (optional)
- 2 Chinese dried red chiles, finely sliced (optional)
- sesame seeds (optional)
