Chicken in a Pot, No Pie (Rachel Ray)

Use less stock for a thicker soup
- 1 tablespoon extra-virgin olive oil, 1 turn of the pan
- 2 tablespoons butter, cut into pieces
- 2 starchy potatoes, skin left on and diced (recommended: Idaho)
- 1 medium onion, chopped
- 2 ribs celery with leafy green tops, finely chopped
- 2 carrots, peeled and diced
- 1 bay leaf, fresh or dried
- Salt and pepper
- 1 teaspoon poultry seasoning
- 3 tablespoons all-purpose flour
- 1 cup dry white wine, eyeball it
- 5 cups chicken stock
- 1 1/2 pounds chicken tenders, chopped
- 1 small bunch pencil asparagus, trimmed of woody ends and cut into 2-inch pieces
- 1 cup frozen peas, a couple of handfuls
- 2 to 3 tablespoons fresh tarragon, 4 to 5 sprigs, chopped
- Serve with crusty whole-grain bread - a lot easier than making pastry!
Pepper Crusted Steak Salad

For the Steak: Place the ground pepper on a plate and lay each side of the steak in the pepper
- 1 lb. sirloin steak
- 3 T fresh ground pepper
- 3 T olive oil
- 1 onion, sliced as thinly as possible
- 1/2 t sugar
- 2 c shitake mushrooms, stems removed and sliced
- 1 T butter
- 2 heads romaine lettuce, chopped
- 3 green onions, sliced
- 3 oz. raw blue cheese (I used Point Reyes)
Creamy Avocado Ranch Dressing (ATK)

Crisp lettuces like iceberg and romaine are a perfect match for this creamy dressing
- 1 Hass avocado, ripe, pitted, flesh scooped from skin
- 1/2 teaspoon hot pepper sauce, such as Tabasco
- 1 tablespoon lime juice, from 1 lime
- 1/2 cup buttermilk
- 1/4 cup mayonnaise
- 1 tablespoon minced red onion
- 1 tablespoon minced fresh cilantro leaves
- 1 medium clove garlic , minced
- 1/2 teaspoon sugar
- 3/4 teaspoon table salt
- 1/4 teaspoon ground black pepper
Applesauce Snack Cake with Oat-Nut Streusel (ATK)

This recipe can be easily doubled and baked in a 13 by 9-inch baking dish
- 3/4 cup dried apples (2 ounces), cut into 1/2-inch pieces
- 1 cup apple cider
- 1 1/2 cups unbleached all-purpose flour (7 1/2 ounces)
- 1 teaspoon baking soda
- 2/3 cup sugar (4 3/4 ounces)
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon fresh ground nutmeg
- 1/8 teaspoon ground cloves
- 2 tablespoons brown sugar
- 1/3 cup chopped pecans (or walnuts)
- 1/3 cup old-fashioned oats (or quick)
- 2 tablespoons unsalted butter, softened
- 1 cup unsweetened applesauce, room temperature
- 1 large egg, room temperature, lightly beaten
- 1/2 teaspoon table salt

Make-Ahead Garlic-Potato Soup (ATK)

- Soup Base
- 3 tablespoons unsalted butter
- 1 medium leek, white and light green parts halved lengthwise, washed, and chopped small (about 1 cup)
- 3 medium cloves garlic, minced or pressed through a garlic press (about 1 tablespoon)
- 2 heads garlic, rinsed, papery skins removed and top third of heads cut off and discarded
- 6 cups low-sodium chicken broth (see note)
- 2 bay leaves
- Table salt
- 1 1/2 pounds russet potatoes, peeled and cut into 1/2-inch cubes (about 4 1/2 cups)
- 1 pound Red Bliss potatoes (unpeeled), cut into 1/2-inch cubes (about 3 cups)
- For Reheating Soup
- 1 cup low-sodium chicken broth (see note)
- 1/2 cup heavy cream
- 1 1/2 teaspoons minced fresh thyme leaves
