Roasted Tomato Sauce with Fennel (ATK)

This sauce is best with short pasta shapes, such as ziti or penne
- 2 tablespoons tomato paste
- 2 tablespoons extra virgin olive oil
- 2 teaspoons minced fresh thyme leaves
- 1/2 teaspoon fennel seed
- 1/8 teaspoon red pepper flakes
- 3 pounds vine-ripened tomatoes (9 to 12 medium), cored and halved pole to pole
- 6 medium cloves garlic, peeled
- 1 small bulb fennel, trimmed, cored, and cut into 1/2-inch slices
- 1 teaspoon red wine vinegar
- Granulated sugar to taste (up to 2 teaspoons; see note above)
- 2 tablespoons chopped fresh basil
Upcycled Paleo Teriyaki Beef Jerky

In one of your smaller sauce pots add all the ingredients, except the beef & soy sauce
- 2 lbs ribeye, trimmed of the big hunks of fat
- pineapple core & rinds
- cilantro stems
- ginger peel
- S.O.C. (sweetener of choice)
- water
- 3 T coconut aminos or wheat-free soy sauce
Ultimate Hummus (ATK)

The hummus can be refrigerated in an airtight container for 5 days
- 1/2 cup dried chickpeas
- 2 quarts water
- 1/8 teaspoon baking soda
- 3 tablespoons juice from 1 to 2 lemons
- 6 tablespoons tahini , stirred well (see note)
- 2 tablespoons extra-virgin olive oil , plus extra for drizzling
- 1 small garlic clove , minced or pressed through garlic press (about 1/2 teaspoon)
- 1/2 teaspoon table salt
- 1/4 teaspoon ground cumin
- Pinch Cayenne
- 1 tablespoon minced fresh cilantro or parsley leaves
Golden Nuggets

Mix together everything but the sunflower seeds and form them into small balls and roll in the sunflower seeds
- 8 ounces dried apricots, chopped
- 2 1/2 cups flaked sweetened coconut
- 3/4 cup sweetened condensed milk
- 1 cup roasted, finely chopped sunflower seeds
Seafood Chowder (FN)

- 6 ounces slab bacon, cut into 1/2-inch pieces
- 2 tablespoons butter
- 2 large onions, diced (about 4 cups)
- 1/4 cup flour
- 2 cups clam broth or juice
- 4 white potatoes, peeled and diced
- 2 sweet potatoes, peeled and diced
- 1 1/2 teaspoons thyme
- Salt and freshly ground black pepper
- 1/2 pound shucked clams
- 1/2 pound haddock, cut into 3/4-inch chunks
- 1/2 pound Maine shrimp, peeled and deveined
- 1/2 pound scallops
- 1/2 pound shucked oysters
- 4 cups half-and-half
- Fresh parsley, for garnish

To avoid off flavors, make sure to reduce the cranberry juice in a nonreactive stainless steel pan
- 2 cups cranberry juice
- 3 tablespoons balsamic vinegar
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon minced shallot
- 1 teaspoon minced fresh thyme leaves, or 1/4 teaspoon dried
- 1/2 clove garlic, minced or pressed through garlic press
- 1/2 teaspoon table salt
- 1/2 teaspoon ground black pepper

Makes about 1/4 cup, enough to dress 8 to 10 cups lightly packed greens
- 1 tablespoon balsamic vinegar
- 1 1/2 teaspoons very finely minced shallot
- 1/2 teaspoon regular or light mayonnaise
- 2 teaspoons Dijon mustard
- 1/2 teaspoon chopped fresh thyme leaves
- Salt and ground black pepper
- 3 tablespoons extra-virgin olive oil
Raspberry Cream Cheese Brownies (ATK)

Adjust oven rack to middle position and heat oven to 350 degrees
- 1 (8 ounce) package cream cheese, softened
- 1/4 cup sugar
- 1 large egg yolk
- 3/4 teaspoon vanilla
- Brownies
- 2/3 cup flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 8 tablespoons (1 stick) butter, cut into pieces
- 4 ounces unsweetened chocolate, chopped
- 1/2 cup raspberry jam
- 1 1/4 cups sugar
- 3 large eggs
- 1 1/2 teaspoons vanilla
Tuna Salad

- 4 (6 ounce) cans tuna, drained
- 1 stalk celery, chopped
- 1/2 cup chopped red onion
- 1/2 cup mayonnaise
- 2 T. garlic aoli
- 2 T. chopped banana peppers
- 1/2 tsp celery seed
- 1/2 tsp black pepper
