- 2 tablespoons natural cocoa powder, plus extra for dusting pan
- 2 1/4 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- Pinch salt
- 1 cup buttermilk, room temperature
- 2 large eggs, room temperature
- 1 tablespoon white vinegar
- 1 teaspoon vanilla extract
- 2 tablespoons red food colouring
- 12 tablespoons (1 1/2 sticks) unsalted butter, softened
- 1 1/2 cups sugar
- 1 recipe Cream Cheese Frosting
- 2 (8 ounce) packages cream cheese, softened
- 10 tablespoons (1 1/4 sticks) unsalted butter, cut into chunks and softened
- 2 tablespoons sour cream
- 1 1/2 teaspoons vanilla
- 1/4 teaspoon salt
- 2 cups icing sugar
Spicy Cucumber Relish (ATK)

Combine cucumber, shallot, chile, mint, 1 tablespoon lime juice, and 1/4 teaspoon salt in medium bowl
- 1 medium cucumber, peeled, seeded, and cut into 1/4-inch dice (about 2 cups)
- 1/2 small shallot, minced (about 1 tablespoon)
- 1 serrano chile, seeds and ribs removed, minced (about 1 tablespoon)
- 2 tablespoons chopped fresh mint leaves
- 1 - 2 tablespoons juice from 1 lime
- Table salt
Plain Pie Pastry (MRS)

- 2 cups flour
- 1 tsp salt
- 2/3 cup shortening
- 5 to 7 tablespoons cold whole milk
Curried Celery Soup (SB)

Use celery root and sweet potatoes in place of celery and standard potatoes
- 2 teaspoons olive oil
- 1 onion, chopped
- 1 leek, sliced
- 5 1/2 cups chopped celery
- 1 tablespoon medium or hot curry powder
- 1 1/2 cups washed and diced unpeeled potatoes
- 3 3/4 cups vegetable stock
- 1 bouquet garni
- 2 tablespoons chopped fresh mixed herbs
- Salt
- Celery seeds and leaves, to garnish
Mango Pineapple Salsa

Add all ingredients together, blend and let sit for a couple hours
- 6 mango, peeled and chopped
- 1 pineapple, peeled and chopped
- 2 red pepper, diced
- 1/2 cup cucumber, peeled and diced
- 6 green onion, sliced
- 1/3 cup red onion, diced
- 2 avocado, diced
- 2 jalapeno, seeded and diced

- 1/2 cup lime juice

- 1 lb sweet baby peppers
- 2 ripe Haas avocados
- 1 lime, juiced
- 1/2 handful cilantro, chopped
- 1 t chili garlic or hot sauce
- salt, to taste
- 8 oz bacon, chopped & crisped up

In a stockpot heat the olive oil over medium-high heat
- 3 tablespoons olive oil
- 20 whole cloves garlic, peeled
- 8 large onion, peeled and diced
- 20 carrots, peeled and sliced
- 8 ribs celery, diced
- 6 pounds butternut squash, peeled and cut into large chunks
- 2 cans (102 ounces each) whole tomatoes
- 6 quarts vegetable stock
- 4 cups sherry
- 1/2 cup chopped fresh basil leaves
- 1/2 cup chopped fresh cilantro leaves
- 1 tablespoon balsamic vinegar
- Salt and pepper, to taste
