Never Fail Lemon Pie (MRS)

This pie is unbelievably easy, you really can’t fail
- 1 recipe Gingersnap crust, baked
- 1/2 cup lemon juice
- 1 (14 ounce) can sweetened condensed milk
- 1/4 teaspoon lemon extract
- 2 egg yolks
- 1 recipe meringue
White Chocolate Cranberry Cheesecake

Directions Make the crust: Set racks in the lower third and middle of the oven; preheat to 350 degrees F
- For the crust:
- 18 whole graham crackers, finely crushed (about 2 cups crumbs)
- 2 tablespoons sugar
- Pinch of freshly grated nutmeg
- Pinch of salt
- 5 tablespoons unsalted butter, melted and slightly cooled
- For the filling:
- 4 ounces white chocolate, chopped, plus shaved chocolate for topping

- 2 tablespoons fresh orange juice
