Peanut Butter Fudge Cake - B

1. Make cake: grease and flour one 13 x 9 2" baking pan, set aside
- Cake
- 2 large eggs
- 1 cup [2 sticks] butter or margarine
- 1 cup water
- 1/2 cup buttermilk
- 1/4 cup unsweetened cocoa
- 1 teaspoon vanilla extract
- 2 cups granulated sugar
- 2 cups unsifted all-purpose flour
- 1 teaspoon baking soda
- Topping
- 12 ounces creamy peanut butter at room temperature
- 1 teaspoon peanut or salad oil
- Frosting
- 1/4 cup butter or margarine [1/2stick]
- 3 tablespoons of butter milk
- 2 tablespoons unsweetened cocoa
- 1 1/2 cups confectioners sugar
- 1/2 teaspoon vanilla extract
Baked Fall Vegetables (Verna MacDonald)

1. Preheat oven to 350. Lightly oil 2 rimmed baking sheets
- 2 sweet potatoes
- 2 parsnips
- 1 large red onion
- 340g baby carrots
- 1/2 cup Catalina Dresing
- 1/2 cup cranberry juice
- 1/4 cup maple syrup
- *I have made with carrots, broccoli and onions
- Turnips would be good too.
Tuna Melt (for one)

1. Preheat oven to 375 degrees
- 1 – 6 oz can of tuna, drained and flaked
- 2 T mayonnaise
- 1 pinch salt
- 1 tsp balsamic vinegar
- 1 tsp Dijon mustard
- 2 slices whole wheat bread or a bun
- 2 tsp chopped relish or dill pickle
- 1/4 c shredded sharp cheddar cheese
Brownie Slice - B

First Layer Mix sugar and cocoa together
- First Layer:
- 2 cups sugar
- 1/2 cup cocoa
- 4 eggs
- 1 cup margarine, melted
- 2 teaspoons vanilla
- 1 1/2 cups flour
- 1 teaspoon salt
- 1 1/2 cups chopped walnuts
- Second Layer:
- 1 cup margarine
- 1 1/2 cups brown sugar
- 1 tablespoon flour
- 1 can Eagle Brand milk
- 2 tablespoons corn syrup
Rice Pudding - B

Combine rice with remaining mixture of ingredients and pour into a 1 quart greased saucepan
- 2 cups cooked rice
- two eggs
- 7 tablespoons sugar
- 1/8 teaspoon salt
- 1 teaspoon vanilla
- 1 1/2 cups milk
- 1/3 cup or more raisins
Sausages with Warm Spicy Slaw

1. Using a Single Pan, lightly coat a large frying pan with oil and set over medium heat
- 4 Italian sausages
- 1/4 cup [50 mL] water
- 1/2 green cabbage
- 1/4 teaspoon [2 mL] a chili flakes
- 1/4 teaspoon [1 mL] ground cumin
- 2 T each white vinegar and granulated sugar
- 1/2 teaspoon [2 mL] salt
- 2 green onions
Kamaboko Style Seafood

- Also good as a cold salad
- 1 , 10 ounce package of SeaFlakes or Sea Majesty
- 2 Kaiser rolls
- 2 cups of cheddar cheese
- 3/4 cup mayonnaise or salad dressing
- 1 1/4 teaspoon Worchester sauce
- 1/2 teaspoon onion powder
- Tabasco sauce to taste
- 1/4 teaspoon sage
- pinch of pepper

Lamb Loin Chops

1. Mix marinade (pepper, rosemary, mint, red wine vinegar and soya sauce)
- 4 large Lamb loin chops
- 1/4 tsp freshly ground black pepper
- 1 T fresh rosemary (or 1 tsp dried)
- 1-2 T mint sauce (not jelly)
- 2 T dry sherry or red wine vinegar*
- 1 T light soya sauce
