  • 1 tsp fresh thyme, or 1/4 tsp dried
  • 1/8 tsp pepper
  • 1/2 c sliced fresh mushrooms (or dried shitaki, soaked overnight*)
  • 1 T sherry
  • 1 T fish sauce*
  • 1/2 tsp red pepper flakes*

  • I dash turmeric and pepper
  • 2 teaspoons cornstarch
  • 1 medium tomato, cut into eighths
  • 12 ounces of cod fillets or other lean fish, 1/2 inch thick, cut into 1 1/2 inch pieces

Preheat oven to 400 degrees

  • Makes a 9×13 pan
  • 1 pound fusilli pasta
  • 1 10 ounce bag of frozen spinach (can delete)
  • 1/2 white onion, minced
  • 8 ounces cheddar cheese (or more!)
  • 4 ounces low-moisture mozzarella cheese (can substitute cheeses)
  • 4 Tablespoons butter
  • 3 Tablespoons flour
  • 1 cup heavy cream
  • 1 1/2 Cups whole milk (or lower fat)
  • 1/2 Teaspoon paprika
  • 1/4 Teaspoon cayenne
  • 1/4 Cup bread crumbs (I used Panko)
  • Parmesan cheese, a good dusting on top before baking
  • Salt and Pepper
