Grandma's Blueberry Pie

MASH ABOUT 1 3/4 CUPS OF THE BLUEBERRIES, TO MAKE 1 CUP OF MASHED BERRIES
- 2 PINTS BLUEBERRIES (6 CUPS)
- 1 CYP SUGAR
- 3 TABLESPOONS CORNSTARCH
- 1/2 CUP ORANGE JUICE
- 2 TABLESPOONS LEMON JUICE
- 1 BAKED 9-INCH PASTRY SHELL, COOLED
Fajita Marinade

Marinade for Chicken, Meat, or Shrimp fajitas
- 1/2 tsp Salt
- 1/2 tsp of dry Cilantro or 1 Tbl of fresh Cilantro
- 1/2 tsp Coarse Black Pepper
- 3/4 tsp Oregano
- 3/4 tsp Cumin
- 1/2 tsp Onion Powder
- 1 tsp Minced Garlic
- 1/4 Cup Orange Juice
- 1/4 Cup Lime Juice
- 2 Tbl Olive Oil
- 1 1/2 lbs of Steak, Shrimp, or Chicken, cut into bite size pieces or strips.
Sweet Cinnamon Biscuits

Combine flour, baking powder, salt and baking soda in a medium bowl and mix well
- 2 cups sifted all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/4 teaspoon baking soda
- 1/4 cup vegetable oil
- 3/4 cup buttermilk
- 8 tablespoons (1 stick) butter, softened
- 3/4 cup granulated sugar
- 1 teaspoon cinnamon
- 1 cup milk, optional
White Chocolate Strawberry Tiramisu

1. In a large bowl, beat cream until soft peaks form
- 2 cups heavy whipping cream
- 1 package (8 ounces) cream cheese, softened
- 1/2 cup (4 ounces) mascarpone cheese
- 9 ounces white baking chocolate, melted and cooled
- 1 cup confectioners' sugar, divided
- 1 teaspoon vanilla extract
- 2 packages (3 ounces each) ladyfingers, split
- 2/3 cup orange juice
- 4 cups sliced fresh strawberries
- Chocolate syrup, optional

Belgian Waffles

Belgian waffles are tender and flavorful waffles made with yeast
- 1 (.25 ounce) package active dry yeast
- 1/4 cup warm milk (110 degrees F/45 degrees C)
- 3 egg yolks
- 3 egg whites
- 2 3/4 cups warm milk (110 degrees F/45 degrees C)
- 3/4 cup butter, melted and cooled to lukewarm
- 1/2 cup white sugar
- 1 1/2 teaspoons salt
- 2 teaspoons vanilla extract
- 4 cups all-purpose flour
Chocolate Cherry Cheesecake

Heat oven to 325 degrees. In medium bowl, combine crust ingredients and mix well
- Crust:
- 2 cups chocolate cookie crumbs
- 3 tablespoons butter, melted
- Filling:
- 4 8-oz pkg cream cheese, softened
- 3 eggs
- 3/4 cup sugar
- 1/2 tsp almond extract
- 1/2 cup whipping cream
- 1 21-oz can cherry pie filling
- Glaze:
- 1/2 cup whipping cream
- 1 cup semisweet chocolate chips
Scandinavian Fondue

FISH FONDUE Drain fresh or frozen salmon and/or halibut steaks, 1 inch thick; pat dry
- 2 lbs salmon or halibut steaks
- Dill Sauce: Mix 1/2 cup dairy sour cream, 1/4 cup mayonnaise, 11/2 teaspoons dill weed and 1/2 teaspoon seasoned salt. Makes 3/4 cup.
- Tartar Sauce: Mix 1/2 cup mayonnaise, 1 tablespoon finely chopped dill pickle, 1 1/2 teaspoons chopped parsley, 1 teaspoon chopped pimiento and 1/2 teaspoon grated onion. Makes 1/2 cup.
- Lemon Butter Sauce: Heat 1/2 cup butter or margarine, 21/2 teaspoons grated lemon peel and 1/4 cup lemon juice until butter melts. Serve at room temperature. Makes 3/4 cup.

- 1 tsp pure vanilla extract
- 1 pint strawberries
- Frosting:
- 8 oz cream cheese, softened
- 1/4 - 1/2 cup powdered sugar
- 8 oz frozen Cool Whip

- 1 jar Smucker's hot caramel ice cream topping

- 3 snickers candy bars, chopped
