Cheesecake Brownies

Position the rack in the lower third of the oven and preheat the oven to 350 degrees F
- Cheesecake Topping:
- Cooking Spray
- 8 ounces reduced-fat cream cheese (Neufchatei)
- 1/3 cup sugar
- 1/2 teaspoon vanilla extract
- 1 large egg
- Brownie layer:
- 2 ounces semisweet chocolate, coarsely chopped
- 3 tablespoons unsalted butter
- 2 tablespoons canola oil
- 1 cup all-purpose flour
- 1/2 cup unsweetened Dutch-process cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon fine sea salt
- Pinch cayenne pepper
- 3/4 cup packed dark brown sugar
- 1/4 cup granulated sugar
- 1/2 cup low fat buttermilk
- 2 large egg whites
- 2 teaspoons vanilla extract
Shrimp Dip with Horseradish

Heat cream cheese in double boiler until soft
- 1 8-oz pkg cream cheese
- 1 10 1/2 oz can cream of shrimp soup
- 1/2 cup sour cream
- 1 TBLSP horseradish
- 1/4 tsp Worcestershire sauce
- 1 6-oz can baby shrimp
Caramel Banana Tiramisu

Combine pudding mix and cold milk in a medium bowl and whisk to thicken
- Tiramisu:
- 1 4 oz. package Instant Banana Pudding mix
- 1 cup cold milk
- 1 1/3 cup Marzetti Caramel Apple Dip, divided
- 1/2 Cup sour cream
- 2 cups whipped topping
- 30 Ladyfinger cookies
- 1 cup Orange juice
- 2 large ripe bananas, peeled and sliced
- Topping:
- 1 1/2 Cups whipped topping
- ¼ Cup Marzetti Caramel Apple Dip
- Ground cinnamon
Sangria

Strain the lemon and orange Juices; add sugar, stirring until dissolved
- 2/3 Cup lemon Juice
- 1/3 Cup Orange Juice
- 1/4 Cup Sugar
- 1 bottle (4/5 quart) of Red Wine
- Lemon and/or Oranges slices for garnish
Spinach Queso

Cut cup Velveeta cheese into cubes and cook in double boiler
- 1 large box Velveeta cheese
- 1 jar of Medium Old El Paso Salsa
- 2 roma tomatoes, diced
- 1/4 cup chopped cilantro
- 1/2 pkg baby spinach, chopped
Chili Cheese Dogs

To make the chili: Heat a skillet over medium flame and add 2 tablespoons of olive oil
- 1/4 cup extra-virgin olive oil
- 1 medium onion, chopped
- 1 pound lean ground beef
- 1 cup ketchup
- 1 teaspoon chili powder
- 1 tablespoon prepared yellow mustard
- Kosher salt
- Freshly ground pepper
- 4 all beef hot dogs, about 1/2 pound
- 4 hot dog rolls
- 1/2 cup shredded Cheddar
Frozen Pumpkin Mousse Pie

- 30 small gingersnaps
- ½ tsp cinnamon
- 1 TBSP canola oil
- ¼ tsp ginger
- 1 cup canned pumpkin puree
- ¼ tsp nutmeg
- 2 pints low-fat vanilla ice cream
- 1/3 cup packed brown sugar
Candy Cane Coffee Cakes

This recipe makes three cakes: one for the brunch table and two for gift-giving
- 2 cups dairy sour cream
- 2 packages active dry yeast
- 1/2 cup warm water (105 to 115 degrees)
- 1/4 cup butter or margarine, softened
- 1/3 cup sugar
- 2 teaspoons salt (if using self-rising flour, then omit salt)
- 2 eggs
- 6 About 6 cups all-purpose flour
- 1 1/2 cups finely chopped dried apricots
- 1 1/2 cups drained finely chopped Maraschino cherries
- Thin Icing (see directions)
Blue Cheese Dressing

- 1 qt mayonnaise
- 1/4 c white vinegar
- 1/2 tsp salt
- 1 large clove of garlic chopped fine
- 1 tsp anchovy paste
- 3/4 c chopped parsley or 1/4 c dried parsley
- 1 tsp Englehoffer mustard
- 1 wedge Roquefort or blue cheese
Stuffed Rolled Chicken

Preheat oven to 425F. Spray bottom of a casserole pan with nonstick spray
- 4 (4-ounce) boneless, skinless chicken breasts, flattened to 1/4 inch
- 1/2 teaspoon coarse salt, divided
- Freshly ground black pepper
- 4 pieces bacon
- 12 ounces spinach, stemmed
- 4 ounces cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 2 egg whites, slightly beaten
- 1 1/4 cups bread crumbs (regular or Italian style)
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
