Free-Form Apple-Pear Pie

To test a pear for ripeness, press your thumb near the stem
- FOR THE CRUST:
- 1 1/2 cups all-purpose flour
- 1/4 teaspoon salt
- 5 tablespoons cold butter, cut into small pieces
- 1/4 cup vegetable shortening
- 3-4 tablespoons cold water
- FOR THE FILLING:
- 2 Granny Smith apples, peeled, cored and sliced
- 2 Golden Delicious apples, peeled, cored and sliced
- 2 large firm pears, such as Bartletts, peeled, cored
- and sliced
- 1/2 cup raisins
- 1 tablespoon lemon juice
- 1 teaspoon grated lemon peel
- 1/2 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ground nutmeg
- egg, lightly beaten
- 2 tablespoons butter or margarine, cut into small

- FOR THE TOPPING:
- 1 cup whipping cream
- 3 tablespoons confectioners' sugar
- 1/2 teaspoon cinnamon

Chocolate Thumbprint Cookies

1. Preheat oven to 375 degrees
- 2/3 cup unsalted butter, softened
- 1/2 cup sugar
- 1/4 cup unsweetened dark cocoa powder
- 1/4 teaspoon baking soda
- 1/8 teaspoon salt
- 1 egg
- 1 teaspoon vanilla
- 1 and 1/4 cups all-purpose flour
- 3/4 cup chocolate or multicolor sprinkles (or both!!!)
- 20 (or however many cookies you end up with….) milk chocolate kisses, unwrapped
Blueberry-Lemon Muffins

- 2 1/2 cups unbleached all-purpose flour
- 3/4 cup sugar (white or light brown) plus more for sprinkling on top of the muffins.
- 1 tablespoon baking powder
- 1/8 teaspoon fine salt
- Freshly grated nutmeg
- 1/2 cup (1 stick) unsalted butter
- 1 cup whole milk
- 2 large eggs, at room temperature
- 1 tablespoon finely grated lemon zest
- 1/2 teaspoon pure vanilla extract
- 1 1/2 cups fresh blueberries, rinsed and dried
Sweet - n - Sour Dressing

Shake all ingredients in tightly covered container, refrigerate
- 1/3 cup vegetable oil
- 3 Tbl sugar
- 3 Tbl vinegar (use Heinz salad vinegar & Tabasco), if unable to find vinegar & Tabasco dressing, then add a dash of pepper & dash of red pepper sauce to the vinegar)
- 1 Tbl snipped parsley
- 1/2 tsp salt
ALMOND FUDGE TOPPED SHORTBREAD

Heat oven to 350°F. Grease 13x9-inch baking pan
- 1 cup (2 sticks) butter or margarine, softened
- 1/2 cup powdered sugar
- 1/4 teaspoon salt
- 1 1/4 cups all-purpose flour
- 2 cups (12 oz. package) HERSHEY’S Semi-Sweet Chocolate Chips
- 1 can (14 oz.) EAGLE brand Sweetened Condensed Milk (NOT evaporated milk)
- 1/2 teaspoon almond extract
- Sliced almonds, toasted
White Chocolate Fudge Torte

Heat oven to 400 degrees. Spray 9-inch springform pan with nonstick cooking spray
- Cake:
- 16 oz semisweet chocolate
- 1 cup unsalted butter
- 6 eggs
- Topping:
- 1 cup white chocolate chunks or white vanilla chips, melted
- 1 8-oz container whipping cream
- 1 8-oz pkg cream cheese, softened
- 1/3 cup powdered sugar
- Raspberry Sauce:
- 1 10-oz pkg frozen raspberries, thawed
- 1 cup water
- 1 cup sugar
- 3 Tblsps corn starch
KOLACKY Cookies

- 6 cups flour
- 1 pint sour cream
- 1 pound butter
- 1 cup sugar
- 1 pkg yeast
- 6 egg yolks
- Juice of half a lemon
- Solo brand fruit fillings (apricot, prune, cherry, strawberry)
Hot Lobster Rolls

Many variations of the lobster roll exist, both hot and cold
- 2 , 1 1/2 lb. lobsters, boiled, meat removed
- 8 Tbls. (1 stick) unsalted butter
- 2 Tbls. minced shallot
- 2 Tbls. dry sherry
- 1 Tbls. fresh lemon juice
- pinch cayenne pepper (optional)
- 4 New England rolls (hot dog rolls with split tops and crust-less sides)
- 4 lemon wedges (optional)
Bruschetta with Tomato and Basil
