Cherry Cheese Pie

(Makes one 9-inch pie)
- 1 (9-inch) graham cracker crumb crust or baked pastry shell
- 1 (8-ounce) package cream cheese, softened
- 1 (14-ounce) can Eagle brand Sweetened Condensed Milk (NOT evaporated milk)
- 1/3 cup ReaLemon® Lemon Juice from Concentrate
- 1 teaspoon vanilla extract
- 1 (21-ounce) can cherry pie filling, chilled
Southwestern Burgers

1. Combine first 5 ingredients in a large bowl; mix well
- 1/2 cup finely chopped sweet onion
- 1 teaspoon salt
- 1 teaspoon ground cumin
- 3/4 teaspoon chipotle chile powder
- 1 1/2 pounds ground sirloin
- 4 slices Monterey Jack or pepper
- Jack cheese
- 4 Kaiser or other sandwich rolls, split
- 4 tomato slices
- 1 avocado, sliced
- 8 slices center-cut bacon, cooked
- pickled jalapeno chile slices (optional)
Raspberry Jello Delight

Mix Jello and boiling water until Jello has dissolved
- 1 large raspberry Jello
- 2 cups boiling water
- 1 (20-ounce) can crushed pineapple
- 1 cup sour cream
- 1/2 cup sifted powdered sugar
- 1 TBLSP chopped walnuts
- 1 8-oz pkg cream cheese softened
- 1 TBLSP vanilla
- 1 (17-ounce) can boysenberries (Oregon brand)
Shrimp Rice

- 2 cups Minute steamed rice
- 1/2 tsp fresh lemon rind
- 1/4 cup + 2 tbl of lemon juice
- 1 cup margarine or butter
- 16 oz salad shrimp, cooked
- 2 tbl fresh chopped parsley
- 5 egg yolks
- 1/2 cup parmesan cheese
- 3 tbl sugar
- 1/2 tsp salt

- 2 cups grated cheddar cheese
Southwest-style Stuffed Peppers

1 Halve sweet peppers lengthwise, removing stem ends, seeds, and membranes
- 2 large green sweet peppers
- 8 ounces lean ground beef
- 1/4 cup chopped onion
- 1 14 1/2-ounce can low-sodium tomatoes,
- undrained and cut up
- 1/2 cup water
- 1/2 cup long grain rice
- 1 4 1/2-ounce can diced green chili peppers,
- drained
- 1 teaspoon chili powder
- 1/2 teaspoon garlic salt
- 1/4 teaspoon ground cumin
- 1 cup loose-pack frozen whole kernel corn
- 2 tablespoons shredded reduced-fat cheddar
