Smokey Mac & Cheese Pasta

Cook bacon in 2 quart saucepan over medium high heat, stirring occasionally, until crisp, about 4 minutes
- 2 slices thick-cut bacon, cut into thin strips
- 1 cup finely chopped yellow onion
- 1 cup finely chopped red bell pepper
- 1 package KNORR Pasta Sides - Chicken
- 1/2 cup shredded Pepper Jack cheese
- 2 cups cut-up cooked rotisserie chicken
- Chopped cilantro for garnish, if desired
Clam Dip

Mix horseradish and lemon juice with cream cheese
- 1 can chopped clams
- 3 oz. cream cheese
- 2 teaspoons horseradish
- 1 teaspoon lemon juice
Pork Tenderloin with Roasted Mixed Potatoes

Heat oven to 450 degrees. Line a broiler pan with nonstick foil
- 3/4 lb. EACH peeled sweet and white potatoes, cut into 1/2 inch pieces
- 1 medium onion, cut into 1 inch wedges
- 1/2 cup Italian dressing
- 1 1/2 lb. pork tenderloin
- 1 envelope seasoned coating mix for pork (Shake 'N Bake or another brand)
- Chopped fresh parsley for garnish
Bruschetta

Combine all ingredients, except cheese
- 6 Roma Plum Tomatoes, chopped
- 1/2 cup sundried tomatoes
- 3 cloves minced garlic
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1/4 cup fresh basil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- French Baguette Bread
- 2 cups shredded mozzarella
Curry Chicken Salad

Dice the chicken to 3/4" pieces and chill
- Curry Mayonnaise:
- 1 lb. Cooked Chicken Breast
- 1 1/2 oz. Raisins
- 1 1/2 oz. Pecans
- 2 cups Mayonnaise
- 2 tablespoons Curry Powder
- 4 oz. Cream of Coconut
- 1/8 cup Honey
Spicy Rigatoni with Salami and Olives

Preheat oven to 400 degrees
- 20 cherry tomatoes
- 2 teaspoons extra-virgin olive oil
- 2 tablespoons extra-virgin olive oil
- salt
- black pepper - freshly ground
- 8 oz. rigatoni pasta
- 8 oz. spicy salami, casing removed, thinly sliced into half-moon pieces
- 2 cloves garlic, minced
- 1/4 cup capers extra-fine
- 1/4 cup kalamata olives
- 1/3 cup dry white wine
- 1/4 cup fresh parsley, coarsely chopped
Chicken Marsala

Beat eggs. Place breadcrumbs on plate
- 4 large skinless chicken breast cutlets (1/4" thickness) (halved)
- 2 eggs
- 1 cup dried bread crumbs
- butter or margarine
- 2 garlic cloves, sliced
- 4 tsp. all-purpose flour
- 1 cup water
- 1/3 cup Marsala wine
- 1 chicken flavor bouillon cube or envelope
- 1/8 tsp. pepper
- 1/4 cup chopped parsley
- parsley sprigs for garnish

- 1/4 stick to 1/2 stick butter

- 8 large garlic cloves
- 2 tablespoons finely chopped rosemary
- 2 tablespoons packed dark brown sugar
- 2 tablespoons balsamic vinegar
- 1 teaspoon cayenne
- 8 pounds baby back pork ribs (8 racks; see cooks note, below)
- 1 cup water
- 2 cups hot water
- 1 cup balsamic vinegar
- 1/2 cup packed dark brown sugar

Key Lime Pie

- 1 1/4 cups crushed graham crackers

- 1 1/4 cups condensed evaporated milk (one 14 ounce can)
