Soup- Taco Soup

Heat a large soup pot over medium
- 1 lb. extra lean ground beef (93% lean or or leaner)
- 1 onion, chopped
- 4-5 cloves garlic, minced
- 1 1.25-oz. packet taco seasoning (about 1/4 c.)
- 3 c. water, divided
- 2 28-oz. cans diced tomatoes
- 1 15-oz. can tomato sauce
- 2 15-oz. cans kidney beans, rinsed and drained
- 1 can corn, drained
Stuffed Zucchini

Preheat your oven to 400. Slice them in half length-ways
- 1 tbsp sour cream
- 1/4 to 1/2 tsp salt
- 1/4 tsp curry powder
- 1/2 tomato
- 1/2 tsp thyme
- 2 zucchinis
- 1 onion
- cheese
- pepper
Sauce- Caramel Syrup- Buttermilk (OBB)

Combine buttermilk, sugar, butter, corn syrup, and baking soda in a LARGE pot
- 3/4 c. buttermilk
- 1 1/2 c. sugar
- 1 stick real butter
- 2 Tbsp. corn syrup
- 1 tsp. baking soda
- 1 tsp. vanilla
Pasta- Lemon-Orzo w/ Veggies and Chicken

Cook orzo according to package directions
- 3/4 C uncooked orzo pasta
- 1/4 tsp grated lemon rind
- 3 Tbs fresh lemon juice
- 1 Tbs extra virgin olive oil
- 1/2 tsp kosher salt
- 1/2 tsp minced garlic
- 1/4 tsp honey
- 1/8 tsp black pepper
- 1 C cooked shredded or diced boneless, skinless chicken
- 1/2 C diced cucumber
- 1/2 C diced red bell pepper
- 1/3 C sliced green onions
- 1 Tbs chopped fresh dill, or 1 tsp dried dill
- 1/2 C crumbled feta cheese
Coleslaw

Combine mayo, mustard, vinegar, sugar, salt, onion, and celery seed
- 1 c. mayonnaise
- 2 Tbsp. Dijon or whole-grain mustard
- 2 Tbsp. apple cider vinegar
- 2 Tbsp. sugar
- 1/2 heaping tsp. Kosher salt
- 1 Tbsp. grated onion
- 2-2 1/2 tsp. celery seed
- 1 16-oz. bag shredded cabbage with carrots 1/2 minced green bell pepper
- 1 carrot, peeled and grated
Crafts- Slime

Add borax powder to 1 cup of water and stir to dissolve
- 1 teaspoon borax powder
- 1 1/2 C water, divided
- 4 oz (1/2 C) Elmer's glue, clear or white
- food coloring
Hot Pockets

Prepare dough through the first rise
- 1 recipe Breadstick Dough
- Desired fillings (I used about 6-8 oz. of ham and 4-6 oz. sharp cheddar)
Salad- Poppy Seed Salad

Mix
- Dressing:
- 1/3 c. white vinegar
- 1 tsp. Kosher salt
- A few turns of freshly ground black pepper
- 3/4 c. sugar
- 1 tsp. mustard
- 1 green onion, ends removed (both the "hairy" end and where the green part starts to get floppy)
- 1/2 c. vegetable oil
- 1 tsp. poppy seeds
- In a blender, combine vinegar, salt, pepper, sugar, and mustard. While the blender is running, add the green
- onion. Continue running the blender
- and add the oil in a steady stream. Stir in poppy seeds.
- salad:
- 8 oz. (1/2 bag) of baby spinach
- 1/2-1 head Romaine lettuce, chopped
- 1/2 thinly sliced medium red onion
- 1 large avocado, cubed
- 8 oz. mozzarella or Swiss cheese, shredded
- 1 12-oz. package bacon, cooked and crumbled
- 1 large can Mandarin oranges,
- Combine all ingredients except dressing in a bowl. Add dressing right before serving.
Bierocks

1. Brown the meat, onions, and garlic in a large skillet
- Dough
- 1 lb. hamburger
- 8 cups cabbage, shredded
- 1 medium onion, diced
- 2 – 4 cloves of garlic, minced
- 1/4 teaspoon pepper
- 2 tablespoons melted butter, optional
Apple Dumplings

Preheat oven to 350. Spray a 9x13 pan with non-stick cooking spray
- 2 medium Granny Smith apples
- 2 cans crescent rolls
- 2 sticks butter
- 1 1/2 c. sugar
- 1 tsp. vanilla
- cinnamon (for sprinkling)
- 12 oz. (1 can) Mountain Dew or Sprite
