Pancakes- Whole Wheat Buttermilk

Combine flours, sugar, baking powder, baking soda, and salt in a mixing bowl and whisk together
- 3/4 C whole wheat flour
- 3/4 C all-purpose flour
- 3 Tbs sugar
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 C buttermilk
- 1 tsp vanilla extract
- 1 Tbs canola oil
- 1 large egg
- 1 large egg white
- Cooking Spray or butter for pan
Salad- Ramen Noodle Coleslaw Salad

Toss & chill for a few hours or overnight
- 16 oz. coleslaw
- 1/4 C green onions, finely chopped
- 1/2 C sunflower seeds or slivered almonds
- 2 packs ramen noodles (chicken flavored), broken in small pieces
- 3/4 C oil
- 1 Tbl pepper (scant)
- 4 Tbl vinegar
- 4 Tbl sugar
- 1 pack of flavoring from the ramen noodles
Popcorn- Butter Toffee Popcorn

Preheat the oven to 250 degrees
- 3/4 cup unpopped popcorn kernels, white or yellow
- 2 sticks butter
- 2 1/4 cups light brown sugar
- 3/4 cup dark corn syrup
- 1/2 teaspoon salt
- 2 teaspoons pure vanilla extract
- 1 teaspoon baking soda
- 2-3 cups roasted, salted peanuts
Eggs- Baked Sausage Omelet

425* Butter a 8x8 dish. Heat oil in skillet
- 2 Tbl. Oil
- 1 small onion, diced
- 12 oz mild breakfast sausage
- 8 eggs
- 1/3 C milk
- 1 tsp. salt
- Pepper
- 1 red bell pepper, diced
- 1 1/2 C shredded cheese
- Parsley

In a large bowl, whisk together the flour, baking powder, baking soda, salt, and ground flaxseed
- 2 cups whole-wheat flour (I use King Arthur’s organic white whole-wheat flour)
- 2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon of fine sea salt
- 1 teaspoon ground flaxseed (optional)
- 1 tablespoon honey
- 2 large eggs, lightly beaten
- 1 3/4 cups milk (you can use any kind – skim, 2% or whole)
- 2 tablespoons unsalted butter, melted + butter for frying
- 2 ripe bananas, mashed
- 100 % pure maple syrup for serving
Sauce- Hot Fudge Sauce

1. If you're using baking squares, chop them up into small pieces so they melt easier
- 3 oz semi-sweet chocolate* (3 squares of baking chocolate, or about 1/2 C chocolate chips
- 1/4 C butter
- 1 Can Sweetened Condensed Milk
Muffins- Pumpkin Chocolate Chip Muffins

Mix ingredients well and then add chocolate chips
- 1 2/3 c. flour
- 1 c. sugar
- 1 T. pumpkin pie spice**
- 1 tsp. soda
- 1 tsp. baking powder
- 1/4 tsp salt
- 2 eggs, slightly beaten
- 1 c. canned pumpkin puree
- 1/2 c. butter, softened
- 1 c. chocolate chips
- If you don’t have pumpkin pie spice, use 1 1/2 teaspoon cinnamon, 3/4 teaspoon ginger, 1/4 teaspoon nutmeg and 1/4 teaspoon cloves.
Soup- Beef Stew

Preheat oven to 350. Combine ingredients in a large oven-safe pot that comes with an oven-safe lid
- 1 1/2-2 lb. lean stew beef
- 4-5 medium red potatoes, chopped
- 4-5 medium carrots, peeled and chopped
- 4 stalks celery, chopped
- 2 onions, chopped
- 4-5 cloves garlic, minced
- 2 12-oz. cans or 3 c. vegetable juice cocktail (like V8 or even Bloody Mary mix)
- 1 10-oz. can condensed tomato soup
- 10 oz. water (just use the can from the tomato soup to measure)
- 1 tsp. basil
- 2 beef bouillon cubes (or 2 tsp. beef base)
- 1/2 tsp. freshly ground black pepper
Beef Stroganoff (w/ stew meat)

Place the stew meat, salt, pepper and onion in the slow cooker
- 2-3 pounds stew meat (or a 3-pound chuck roast, cubed)
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 medium yellow onion, diced
- 1/4 teaspoon garlic salt
- 1 tablespoon Worcestershire sauce
- 1 1/2 cups beef broth or stock
- 1 tablespoon ketchup
- 1/3 cup flour
- 6-7 tablespoons apple juice or water
- 4-8 ounces sliced mushrooms
- 1/2 cup light or regular sour cream
Cookies- Pecan Maple Breakfast Cookies (healthy)

Preheat oven to 375 degrees F and grease a cookie sheet
- 1 cup whole-wheat flour
- 3/4 cup rolled oats
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup applesauce
- 3 tablespoons maple syrup
- 2 tablespoons butter, softened but not melted
- 1 egg
- 1/2 teaspoon vanilla
- 1/2 cup chopped pecans
