Apple Streusel Bars

To prepare crust, mix flour, sugar, salt, and baking powder in a medium bowl
- SWEET PASTRY:
- 2 c. flour
- 1/2 c. sugar
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 c. real butter, softened (no substitutions!)
- 1 egg, beaten
- APPLE FILLING:
- 1/2 c. white sugar
- 1/4 c. flour
- 1 tsp. cinnamon
- 4 c. (about 3 medium) sliced, peeled baking apples (I've used Granny Smith in the past, although this time around I used Gala and they were fabulous)
- GLAZE:
- 2 c. powdered sugar
- 3 About 3 Tbsp. milk (whole milk is best)
- 1 tsp. almond extract
Cake- Butterfinger cake

Make and bake cake according to box directions
- 1 box chocolate cake mix (+ whatever it calls for on the back)
- 1 can sweetened condensed milk
- 1 jar carmel sauce
- 1-8 oz container of cool whip
- 4 butterfingers, crushed
Burritos- Chicken & Bean

Place a rimmed baking sheet in the oven and heat the oven to 450 degrees
- 1/4 cup canola or vegetable oil
- 1 onion, chopped fine
- 1 (16-ounce) can black beans, drained and rinsed
- 1 1/2 cups cooked brown or white rice
- 2-3 cups diced, cooked chicken
- 1-2 teaspoons minced canned chipotle chiles in adobo sauce (use the lesser amount for less heat, greater amount for a bigger kick)
- 1 cup shredded cheddar or monterey jack cheese (or a combination of both)
- 1/2 cup finely chopped fresh cilantro
- Salt and Pepper
- 6 large burrito-size flour tortillas
Pancakes- Buttermilk

In a large pitcher, combine flour, sugar, baking powder, baking soda, and salt
- 3 c. all-purpose flour
- 3 Tbsp. sugar
- 1 Tbsp. baking powder
- 1 1/2 tsp. baking soda
- 3/4 tsp. salt
- 3 c. buttermilk
- 1/2 c. milk
- 3 eggs, separated
- 1/3 c. (5 1/3 Tbsp.) butter, melted
Cookies- No Bake

In lrg. Pot add butter, sugar, cocoa powder, & milk
- 1 stick butter
- 2 C sugar
- 2 Tbl. Cocoa powder
- 1/2 C milk
- 2/3 C peanut butter
- 3 C quick cooking oats
- 1 tsp. vanilla
- Pinch of salt
Vegetarian Mexican Casserole

Mix first 9 ingredients. Put in greased 9x11 dish
- 1 Can Corn, drained
- 1 can black beans, rinsed
- 8 oz salsa
- 2 C shredded cheese
- 10 oz rotel
- 2 C cooked rice
- ¼ tsp. pepper
- 3 green onions, chopped
- 8 oz sour cream
- Sliced black olives
- 8 oz shredded cheese
Muffins- Whole grain banana pecan

Preheat the oven to 350. Line a muffin tin with liners--you'll need about 15-16
- 3/4 c. all-purpose flour
- 1 1/4 c. whole wheat flour
- 3/4 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 3/4 c. sugar
- 1/4 c. honey (you can substitute 1/4 c. sugar here if you prefer)
- 1/4 c. butter, softened
- 2 large eggs
- 1 1/2 c. mashed very ripe banana (about 2 large bananas or 3 smaller ones)
- 1/3 c. low-fat sour cream or plain yogurt
- 1 tsp. vanilla extract
- 1/4 c. pecans, chopped
- 1/4 c. packed brown sugar
Kalua Pork

Preheat oven to 375 degrees
- 10-12 pounds pork shoulder butt roast (don’t substitute a leaner cut of pork or it will be dry)
- 1 bottle liquid smoke
- 2 tablespoons sea salt (or hula salt if you can find it)
- 1 1/2 cups water
Granola

Preheat oven to 300. In a large mixing bowl combine the oats, flour, flax seed, coconut and nuts
- 3 1/4 cups Oats (Old Fashioned or Quick—any combination)
- 1 1/4 cup white wheat flour-freshly ground if possible
- 1 1/3 cup shredded coconut
- 1/4 cup flax seed (optional)
- 1 cup or more coarsely chopped almonds and/or pecans
- 3/4 cup brown sugar
- 1 stick butter
- 1/3 cup water
- 1/2 tsp salt
- 1 tsp vanilla
- 1/2 tsp cinnamon
- 1/2 tsp cardamom
Salad- Asian Wonton Salad

Heat about 1 inch of oil in a pot on the stove top
- Sweet Sesame Dressing:
- 2/3 C rice vinegar
- 1 C canola oil
- 2 Tbs sesame oil
- 4 cloves garlic very finely minced
- 2 Tbs soy sauce
- 1/2 C sugar
- 4 Tbs sesame seeds
- Place all ingredients into a quart jar (or something equivalent) and shake vigorously. If desired, make ahead of time and store in the fridge.
- Asian Wonton Salad:
- 2 heads romaine lettuce
- 3 chicken breasts, cooked and cubed or shredded
- cherry tomatoes
- 1 red onion, sliced thinly
- 1 cucumber, sliced
- 1 package wontons
- vegetable oil for frying
- optional: cashews
