To prepare crust, mix flour, sugar, salt, and baking powder in a medium bowl

  • SWEET PASTRY:
  • 2 c. flour
  • 1/2 c. sugar
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. real butter, softened (no substitutions!)
  • 1 egg, beaten
  • APPLE FILLING:
  • 1/2 c. white sugar
  • 1/4 c. flour
  • 1 tsp. cinnamon
  • 4 c. (about 3 medium) sliced, peeled baking apples (I've used Granny Smith in the past, although this time around I used Gala and they were fabulous)
  • GLAZE:
  • 2 c. powdered sugar
  • 3 About 3 Tbsp. milk (whole milk is best)
  • 1 tsp. almond extract

Place a rimmed baking sheet in the oven and heat the oven to 450 degrees

  • 1/4 cup canola or vegetable oil
  • 1 onion, chopped fine
  • 1 (16-ounce) can black beans, drained and rinsed
  • 1 1/2 cups cooked brown or white rice
  • 2-3 cups diced, cooked chicken
  • 1-2 teaspoons minced canned chipotle chiles in adobo sauce (use the lesser amount for less heat, greater amount for a bigger kick)
  • 1 cup shredded cheddar or monterey jack cheese (or a combination of both)
  • 1/2 cup finely chopped fresh cilantro
  • Salt and Pepper
  • 6 large burrito-size flour tortillas

Heat about 1 inch of oil in a pot on the stove top

  • Sweet Sesame Dressing:
  • 2/3 C rice vinegar
  • 1 C canola oil
  • 2 Tbs sesame oil
  • 4 cloves garlic very finely minced
  • 2 Tbs soy sauce
  • 1/2 C sugar
  • 4 Tbs sesame seeds
  • Place all ingredients into a quart jar (or something equivalent) and shake vigorously. If desired, make ahead of time and store in the fridge.
  • Asian Wonton Salad:
  • 2 heads romaine lettuce
  • 3 chicken breasts, cooked and cubed or shredded
  • cherry tomatoes
  • 1 red onion, sliced thinly
  • 1 cucumber, sliced
  • 1 package wontons
  • vegetable oil for frying
  • optional: cashews
