Sweet & Savory Flank Steak

Combine first 6 ingredients for the marinade
- 1/2 C brown sugar
- 1/2 C olive oil
- 1/2 C soy sauce
- 1 C pineapple juice
- 1 T freshly grated ginger
- 4-5 garlic cloves, finely minced
- up to 2 lbs flank steak
Apple Crisp

Preheat the oven to 375 degrees F
- 7 tart apples, peeled, cored and cut into chunks or slices
- 1 tablespoon lemon juice (freshly squeezed or bottled)
- 1/2 teaspoon vanilla
- 1/2 cup all-purpose or whole wheat flour
- 1 cup rolled oats
- 1 cup brown sugar
- 1/2 teaspoon ground cinnamon
- 8 tablespoons (1 stick) butter, softened to room temperature
Pasta- Sour Cream Noodle Bake

Preheat oven to 350 degrees
- 1-1/4 pound Ground Chuck
- 1 can 15-ounces Tomato Sauce
- 1/2 teaspoons Salt
- Freshly Ground Black Pepper
- 8 ounces, weight Egg Noodles
- 1/2 cups Sour Cream
- 1-1/4 cup Small Curd Cottage Cheese
- 1/2 cups Sliced Green Onions (less To Taste)
- 1 cup Grated Sharp Cheddar Cheese
Beef Taquitos

Preheat oven to 425 degrees
- 3 C cooked, shredded beef roast*
- 4 oz green chilies, undrained
- 1/4-1/2 t minced chipotle pepper in adobo sauce (I use 1/4 t for mild heat. See note below)
- 3 t adobo sauce from the canned chipotle peppers
- 1 t garlic powder
- 1 t coriander
- 1/2 t cumin
- 1 t chili powder
- zest from one lime
- 1 T fresh lime juice
- 1 package Queso Fresco (about 12 oz)
- 6 " white corn tortillas (about 20)
- olive oil or cooking spray
- kosher salt
- Note: If you don't want to work with the chipotle peppers, or can't find them, try adding some Chipotle Chili Powder. You can find it by the other spices in the grocery store. It will still give you a

- 1 pint strawberries
- 1/3 c. white sugar
- 1 tsp.vanilla extract

- Chicken:
- 3-4 boneless, skinless chicken breasts
- Salt and pepper
- 1 cup cornstarch
- 2 eggs, beaten
- 1/4 cup canola oil
- Sauce:
- 3/4 cup sugar
- 4 tablespoons ketchup
- 1/2 cup vinegar
- 1 tablespoon soy sauce
- 1 teaspoon garlic salt
