Muffins- blueberry

Preheat oven to 400 degrees
- 1 3/4 c. all-purpose flour
- 2 3/4 tsp. baking powder
- 3/4 tsp. table salt
- 1/2 c. sugar
- 2 tsp. grated orange or lemon peel
- 1 large egg
- 3/4 c. buttermilk
- 1/3 c. canola oil
- 1 c. fresh or frozen blueberries
- 1 Tbsp. flour
- 1 Tbsp. sugar
- Streusel Topping
- 1/4 c. sugar
- 2 1/2 Tbsp. flour
- 1/2 tsp. cinnamon
- 1 1/2 Tbsp. butter
Chicken Bacon Stuffed Pizza Rolls

First take 1 teaspoon of your ranch dressing mix and combine it with 1 1/2 T parmesan cheese
- 1 roll refrigerated pizza dough* (or make your own)
- 1 packet Hidden Valley Ranch Dressing mix
- 2 T grated Parmesan cheese
- 1 T olive oil or melted butter
- sharp cheddar cheese (I used 75% sharp cheddar and 25% mozzarella)
- 8 slices bacon, cooked and crumbled
- 1 about 1 C shredded, cooked chicken.
- 3/4 C mayo
- 3/4 C milk
Pasta- Whole Wheat Mac & Cheese

Melt the butter in a sauté pan over medium heat
- 1 – 1 1/2 cups of dried whole-wheat macaroni noodles, boiled according to package directions
- 2 tablespoons butter
- 2 tablespoons whole-wheat flour
- 1 cup milk
- 1 cup grated cheese (you can use any type of cheese…we usually use cheddar or a mix of different cheeses works well too)
- Salt and pepper to taste
- Optional topping: grated parmesan cheese or whole-wheat breadcrumbs

- 2 chicken bouillon cubes (or 2 teaspoons chicken bouillon granules)
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bay leaf

- 1/4 cup water
- 1 cup sugar
- 1/2 cup (1 stick) butter, cut into 8 pieces
- 1/2 cup heavy cream
- 1 teaspoon vanilla

- 44 uncooked jumbo pasta shells (That’s about one and one-half 12-oz boxes)
- 2 c chopped cooked chicken
- 2 c fresh chopped spinach
