Enchiladas- honey lime

Mix the first four ingredients and toss with shredded chicken
- 6 tablespoons honey
- 5 tablespoons lime juice (1 large lime)
- 1 tablespoons chili powder
- 1/2 teaspoon garlic powder
- 1 pound chicken, cooked and shredded (I used 3 small chicken breasts)
- 8-10 flour tortillas
- 1 pound monterey jack cheese, shredded
- 16 ounces green enchilada sauce
- 1 cup heavy cream (to lighten them up, I have substituted sour cream with good results)
Bread- Cornmeal Crescent Rolls

Heat the milk to just below a boil so bubbles are just appearing around the edges (this is called scalding milk)
- 2 cups milk
- 2/3 cup yellow corn meal
- 1 1/2 tablespoons instant yeast
- 1/2 cup (1 stick) butter
- 1/3 cup granulated sugar
- 1 teaspoon salt
- 3 large eggs
- 5 1/2 – 6 cups flour
Cookie Dough (safe to eat)

In a large bowl, cream butter and sugar until light in color
- 1 cup butter
- 2 cups flour
- 1 teaspoon baking soda
- 3/4 cup brown sugar
- 1 small (~3.5oz) box instant vanilla pudding
- 1/4 cup milk
- 1 Tablespoon vanilla
- 2 cups chocolate chips
Chicken Broth

Trim any excess fat off of chicken
- 1 leftover chicken (aka carcass) with excess fat removed (our crockpot “fautisserie” chicken works great!)
- 2-3 ribs celery, if they have leaves on- don’t cut them off!
- 2 carrots or a handful of baby carrots
- 1/4 of a large onion, or 1/2 of a smaller one
- 3 cloves garlic, smashed with a knife (see what I mean, here)
- 10 peppercorns
- 1 heaping tablespoon kosher salt
- Herbs: fresh sprigs of parsley, thyme, and a bay leaf. Rosemary and sage also good.
- OR use dried herbs. I use 2 teaspoons each of sage, rosemary, and thyme, and also a handful of fresh parsley.
Soup- Cream of Tomato Soup

In a large sauce pan, melt the butter over medium heat
- 1/3 cup butter
- 1/4 cup flour
- 3 cups tomato juice or V-8
- 1/4 teaspoon baking soda
- 2-3 cups milk
- 1 tablespoon sugar
- 1 teaspoon salt

In lrg mixing bowl, dissolve yeast in warm water
- 1 1/2 tsp. active dry yeast
- 3/4 C warm water
- 1 1/2 tsp. sugar
- 3/4 tsp. salt
- 1 1/2 C flour
- 2 Tbl. butter, melted
- coarse salt
Potatoes- Nick’s Hash

Cook meat. Dice potatoes & onions
- 1 lb. hamburger
- 2 baking potatoes
- 1 onion
- 1 Can diced tomatoes or rotel
- Shredded cheese
- Italian seasoning

- Butter

Banana Split cheesecake

Mix cracker crumbs, sugar, & butter
- 2 C graham cracker crumbs
- ¾ C sugar
- ¼ lb. butter, melted
- 2 8oz pkgs cream cheese
- 1 ½ C powdered sugar
- 4 bananas sliced
- 15 oz can crushed pineapple, drained
- 1 16 oz. tub cool whip, thawed
Rice- Fried Rice

Boil water and add rice. Reduce heat to low, cover, and cook for 20 minutes
- SEASONING:
- Fried Rice
- 2 c. white rice + 4 c. water (OR 4 c. cold, leftover rice, which is actually better)
- 3 Tbsp. butter
- 1/4 c. minced red onion
- 2 Tbsp. chopped green onions
- 1/2 Tbsp. minced garlic
- 1/4 c. chopped carrots
- 1/2 c. chopped mushrooms
- 8 oz. (1/2 bag) of coleslaw mix
- 3-4 generous Tbsp. soy sauce
- 1 Tbsp. dried onion
- 1 Tbsp. Kosher salt
- 1 tsp. garlic powder
- 1 1/2 tsp. black pepper
- 1/2 tsp. celery salt
- 1 1/2 tsp. sugar
