Southwestern Chili con Queso Pasta Bake (Rachel Ray)

Preheat the broiler to high and position the rack 8 inches from the heat
- 1 pound penne rigate (ridged penne)
- 1 1/2 pounds ground beef
- 1 tablespoon ground cumin (1 palmful)
- 1 tablespoon roasted ground coriander (1 palmful)
- 2 tablespoons chili powder (2 palmfuls)
- Coarse black pepper
- 1 large yellow onion, chopped
- 3-5 garlic cloves, chopped (we really like garlic so I put in more, the recipe calls for 3)
- 1 jalepeño
- 2 tablespoons butter
- 2 tablespoons all-purpose flour (2 palmfuls)
- 2 cups milk
- 3/4 pound cheddar cheese (about 2 1/2 cups)
- 1/4 cup fresh cilantro leaves (a generous handful), chopped
- 1/2 cup fresh flat-leaf parsley leaves (a few handfuls) chopped
- 1 14-ounce can diced fire-roasted tomatoes
Hearty Chipotle Chicken Soup Recipe

In a Dutch oven, saute onion in oil until tender
- 1 large onion, chopped
- 1 tablespoon canola oil
- 4 garlic cloves, minced
- 4 cups reduced-sodium chicken broth
- 2 cans (15 ounces each) pinto beans, rinsed and drained
- 2 cans (14-1/2 ounces each) fire-roasted diced tomatoes, undrained
- 3 cups frozen corn
- 2 chipotle peppers in adobo sauce, seeded and minced
- 2 teaspoons adobo sauce
- 1 teaspoon ground cumin
- 1/4 teaspoon pepper
- 2 cups cubed cooked chicken breast
- 1/2 cup fat-free sour cream
- 1/4 cup minced fresh cilantro
Cherry Glazed Ham

- 1 (10 pound) fully cooked whole ham
- 1 cup SMUCKER'S® Cherry Preserves
- 1/4 cup red wine vinegar
- 2 tablespoons light corn syrup
- 1/4 teaspoon cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves

Grilled Pork Tenderloin

Mix thyme, sage, salt, pepper, allspice, and garlic in a small bowl
- 2 T chopped fresh thyme
- 1 T chopped fresh sage
- pinch salt
- 1 tsp freshly ground pepper
- 1/4 tsp ground allspice or cloves
- 3 cloves garlic, minced
- 2 T vegetable oil
- 1 to 1 1/2 lbs pork tenderloin
- 1/2 cup orange marmalade
- 1/3 cup Dijon mustard
- 1 T grated fresh ginger
- 1 T Worcestershire sauce

- 1 7-oz can chipotle chiles in adobo sauce, undrained
- 1 small onion, cut into 1-inch chunks
- 16 8-in flour tortillas

- 3 eggs
- 1 cup fresh lemon juice (about 4-5 lemons)
- zest of 3 lemons
- 1/2 cup unsalted butter, melted
Baked Garlic, Basil and Camenbert Stuffed Chicken Breasts

Preheat oven to 180'C/350-375'F
- 2 * 2 boneless skinless chicken breasts
- 1 * 1 tablespoon butter (softened but not melted)
- 1-2 * 1-2 tablespoon chopped fresh basil
- 1 * 1 teaspoon minced garlic (or more if you like)
- * camembert cheese (I used a double cream camenbert cut into strips to fit in the pocket)
- 2 * 2 tablespoons flour
- 1 * 1 egg (lightly beaten)
- 1 * 1 cup panko (Japanese breadcrumbs)
- * salt and pepper
- 1/4 * 1/4 cup white wine
- * olive oil flavored cooking spray or butter, for greasing baking dish
