Macaroon Apple pie

In a bowl, combine flour and salt; cut in shortening until crumbly
- Crust:
- 1 1/2 cups flour
- 1/2 tsp salt
- 1/2 cup shortening
- 2-3 T cold water
- Filling:
- 4 cups sliced peeled tart apples
- 1/2 cup sugar
- 1/4 tsp ground cinnamon

Mexican slow-cooked pork carnitas

- 2.5 lb pork shoulder blade roast, lean, all fat removed (or 3 lbs pork sirloin roast)

- dry adobo seasoning (I used Goya)

- chili powder, oregano, cilantro
- 3/4 cup 99% fat free chicken broth
- 2-3 chipotle peppers in adobo sauce (to taste)

- (Adobo Seasoning: 2 T salt, 1 T paprika, 2 tsp black pepper, 1 1/2 tsp onion powder, 1 1/2 tsp dried oregano, 1 1/2 tsp cumin, 1 tsp garlic powder, 1 tsp chili powder - Makes 7 T seasoning)

1. Combine milk, yeast, and 1/3 cup sugar in bowl of a stand mixer; let stand 5 minutes or until foamy

- 1/2 cup warm milk (100°)
- 2 (1/4-oz.) envelopes active dry yeast
- 1/3 cup plus 1/2 cup sugar, divided
- 4 1/2 cups all-purpose flour, divided
- 2 teaspoons kosher salt
- 1 1/2 cups soft butter, divided
- 3 large eggs, at room temperature
- PARCHMENT PAPER
- 1 (4-oz.) bittersweet chocolate baking bar, finely chopped
- 2 cups powdered sugar
- 3 to 4 Tbsp. milk
- 1/2 teaspoon vanilla extract

- 3.75 oz brown sugar 1/2 cup, lightly packed
- 3.5 oz granulated sugar 1/2 cup
- 1 tsp vanilla extract
- 6 oz miniature peanut butter cups 1 cup
- 1/3 cup fudge sauce (optional)
- 1/3 cup peanut butter sauce (optional)
- 6 fl. oz. heavy cream
- 1/2 cup peanut butter chips (3.5 oz)
- 1/3 cup peanut butter, not “natural” variety (3.25 oz)
- 3 tbsp light corn syrup (1.5 oz)
- 1 tsp vanilla extract

- FUDGE SWIRL:
- 3 oz chopped dark chocolate or chocolate chips (1/2 cup)
