Preheat oven to 350 degrees F
- 1 1/2 cups white or whole wheat pastry flour
- 1 teaspoon baking soda
- 1 1/2 teaspoons cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1 cup finely shredded carrots (about 2-3 carrots)
- 1/2 cup pure maple syrup
- 2 tablespoons olive oil
- 1/2 cup natural unsweetened applesauce
- Substitute for 1 egg
- 1 teaspoon vanilla extract
- 1/2 cup unsweetened almond or soy milk
- 1/2 cup finely chopped walnuts or pecans
- 1/2 cup unsweetened shredded coconut flakes
- 1/2 cup raisins
- Cream Cheese Glaze
- 4 oz reduced fat cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1-2 tablespoons unsweetened almond or soy milk

- Cookie:
- 1 cup (250 mL) butter, melted
- 1/2 cup (125 mL) granulated sugar
