Pastry: In a bowl, cut dry ingredients into shortening
- Pastry:

- 1/2 pkg shortening
- 3 cups flour
- 1 tsp salt
- 1 tsp baking powder
- 1 egg
- 1 tsp vinegar
- Water
- Filling:
- 1/2 cup sugar
- 6 egg yolks
- 1/4 cup flour
- 6 scant tbsp corn starch
- 1 1/4 cup milk
- 1 1/4 cup 35% cream
- 2 tsp vanilla
- Chocolate Ganache:
- 1/2 cup 35% cream
- 4 oz milk chocolate, chopped
- 1 tbsp vanilla

Directions Preheat oven to 400 degrees, with rack in center
- 2 cups all-purpose flour
- 3 tablespoons sugar, plus more for sprinkling tops
- 1 tablespoon baking powder
- 3/4 teaspoon salt
