Blueberry and Lemon Curd Puff Pastry Cups

While you can buy commercial lemon curd and tartlet shells at some markets, nothing beats homemade
- Cream Cheese Dough:
- 1 cup all-purpose flour
- Pinch of salt
- 7 tablespoons unsalted butter, cut into pieces, at room temperature, plus more for the pans
- 3 ounces cream cheese, cut into tablespoons, at room temperature
- Lemon Curd:
- 6 large egg yolks
- 1/3 cup sugar
- 1/3 cup freshly squeezed lemon juice
- 10 tablespoons unsalted butter, cut into pieces
- Grated zest of 1 lemon
- Garnish:
- 1 package (6 ounces or 1 1/3 cups) Driscoll's Blueberries
Cranberry Eggnog Cornbread Scones

Preheat oven to 375 degrees F (190 degrees C)
- 2 cups all-purpose flour
- 1/2 cup cornmeal
- 1/3 cup white sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/3 cup butter, chilled
- 3/4 cup craisins (sweetened, dried cranberries)
- 2/3 cup eggnog
Peach Blueberry Cream Cheese Cobbler

Preheat oven to 350. Place butter in 9x13 pan and melt in the heating oven
- 1/2 cup butter
- 1 egg
- 1 1/2 cups milk
- 1 1/2 cups flour
- 2 cups sugar divided
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 5 peaches peeled and chopped
- 2 cups fresh blueberries rinsed
- 6 ounces cream cheese

- 4 cups confectioners powdered sugar

- 1/2 teaspoon ground allspice
- 1/2 teaspoon salt
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda

- 1 cup white sugar
- 1/3 cup brown sugar
- 2 eggs, room temperature
- 3/4 cup milk
- 1 cup pumpkin puree

- 1 (8 ounce) package cream cheese, softened
- 1/4 cup butter, softened
- 3 cups confectioners' sugar
- 1 teaspoon vanilla extract

Raspberry White Chocolate Cupcakes

Preheat oven to 350°F. Grease or line cupcake pans with paper liners
- Cupcakes:
- 1 cup butter, softened
- 1-3/4 cups granulated sugar
- 3 eggs
- 1 tbsp lemon zest
- 2 tsp vanilla extract
- 3-1/3 cups cake & pastry flour
- 1 tbsp baking powder
- 1/4 tsp salt
- 1-1/2 cups milk
- 2 cups raspberries
- 1 cup chopped white chocolate or white chocolate chips
- Glaze:
- 2 cups icing sugar
- 1/3 cup milk
- 1/2 tsp vanilla extract
- 1 or 2 drops of red food colouring (optional)
