In a large bowl, combine the first six ingredients
- 2 cups cooked medium pearl barley
- 2 cups frozen corn, thawed
- 1/2 cup chopped sweet red pepper
- 1/2 cup chopped green pepper
- 3 green onions, chopped
- 1 tablespoon minced fresh cilantro
- 2 tablespoons lemon juice
- 2 tablespoons canola oil
- 1/2 teaspoon salt
- 1/2 teaspoon dried thyme
- 1/8 teaspoon pepper
Apple Pumpkin Muffins

In a bowl, combine the first five ingredients
- TOPPING:
- 2-1/2 cups all-purpose flour
- 2 cups sugar
- 1 tablespoon pumpkin pie spice
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 eggs
- 1 cup canned pumpkin
- 1/2 cup vegetable oil
- 2 cups finely chopped peeled apples
- 1/4 cup sugar
- 2 tablespoons all-purpose flour
- 1/2 teaspoon ground cinnamon
- 4 tablespoons cold butter, cubed

Stir boiling water into Jell-O in large bowl 2 minutes or until completely dissolved
- 1-1/2 cups boiling water
- 1 pkg (8 oz. serving) or 2 pkg (4-serving) Jell-O Brand Raspberry or Strawberry Sugar Free low calorie Gelatin Dessert.
- 1 cup cold water
- Ice cubes
- 2-3/4 thawed Cool Whip Lite Whipped Topping
Snow Peas with Sesame Dressing

Cook peas in boiling salted water until crisp-tender, about 1-1/2 minutes
- 3 cups fresh snow peas
- 2 cups cauliflowerets
- 1 can (8 ounces) sliced water chestnuts, drained
- 1 tablespoon chopped sweet red pepper
- 1/3 cup vegetable oil
- 2 to 3 tablespoons white wine vinegar
- 2 tablespoons sesame seeds, toasted
- 2 to 3 garlic cloves, minced
- 1 tablespoon sugar
- 1 tablespoon lemon juice
- 3/4 to 1 teaspoon salt
- 1/8 to 1/4 teaspoon lemon-pepper seasoning
Zucchini and Corn Saute

In a large skillet, saute zucchini and peppers in oil until crisp-tender, about 4 minutes
- 2 medium zucchini, thinly sliced
- 1 medium green pepper, thinly sliced
- 1 medium sweet red pepper, thinly sliced
- 2 to 3 tablespoons canola oil, optional
- 2 cups fresh or frozen corn
- 1 teaspoon garlic salt, optional
- 1/2 teaspoon Italian seasoning

In a large kettle or Dutch oven, combine all ingredients except the cheese; bring to a boil
- 1-1/2 quarts beef broth
- 1 can (46 ounces) V8 juice
- 2 cups water
- 1 cup diced celery
- 1 cup diced peeled potato
- 1 cup sliced carrots
- 1 cup chopped onion
- 3/4 cup medium pearl barley
- 4 garlic cloves, minced
- 2 tablespoons Italian seasoning
- 1 to 2 teaspoons lemon-pepper seasoning
- 2 teaspoons dried rosemary, crushed
- 1 teaspoon fennel seed
- 1 teaspoon dried mint
- Parmesan cheese, optional

- 1/8 teaspoon ground cinnamon
- 1 (8-ounce) carton strawberry low-fat yogurt
- Garnish:
- 1 cup fresh blueberries
- 2 teaspoons sugar
- 2 teaspoons cranberry-raspberry juice drink
