Crush cereal real fine. Mix cereal, peanut butter, powdered sugar, and melted butter
- 2 c. peanut butter
- 3 c. rice krispy cereal
- 1 stick butter melted
- 1 lb powdered sugar
- 6 oz milk chocolate chips
- 8 oz bar milk chocolate(plain)
- 2 T. crisco
- toothpicks
Bulgur Pilaf with Onions and Tomato Juice

Melt butter in a large saucepan over medium-high heat
- 5 tablespoons butter
- 3 cups chopped onion
- 3/4 cup crushed uncooked vermicelli
- 2 cups uncooked bulgur
- 2 cups hot fat-free, less-sodium beef broth
- 1 cup water
- 1 cup tomato juice
- 1/2 teaspoon salt
- 1/2 teaspoon white pepper
- 1/2 teaspoon ground cumin
- 1/4 teaspoon dried basil
- 1/4 cup chopped fresh flat-leaf parsley
Macadamia Carrot Muffins

In a bowl, combine All-Bran and boiling water; let stand for 10 minutes
- 1-1/2 cups All-Bran
- 1 cup boiling water
- 3/4 cup packed brown sugar
- 1/4 cup molasses
- 1/2 cup vegetable oil
- 3 eggs
- 2 cups buttermilk
- 2-1/4 cups all-purpose flour
- 3-1/2 teaspoons baking soda
- 1 teaspoon salt
- 1-1/2 cups bran flakes
- 1-1/3 cups shredded carrots
- 1 package (8 ounces) chopped dates
- 1 cup chopped macadamia nuts
Southwestern Rice Salad

In a large saucepan, bring water and rice to a boil
- 1-1/3 cups water
- 2/3 cup uncooked long grain rice
- 3/4 cup chopped green pepper
- 1/2 cup chopped red onion
- 1 medium carrot, chopped
- 1 tablespoon canola oil
- 3 garlic cloves, minced
- 1 package (16 ounces) frozen corn, thawed
- 1 can (15 ounces) black beans, rinsed and drained
- 2 medium plum tomatoes, chopped
- 1 cup salted peanuts
- 1/3 cup minced fresh cilantro
- 2/3 cup olive oil
- 1/3 cup lemon juice
- 1/2 to 1-1/2 teaspoons cayenne pepper
- 1/2 teaspoon ground cumin

- 1 cup Mahatma® Whole Grain Brown Rice
- 3/4 cup dried cranberries
- 1 Tbsp margarine
- 3/4 cup onion, chopped
- 3/4 cup celery, chopped
- 1/2 cup pecans, toasted and chopped
- 1/4 cup parsley, chopped
- 3/4 tsp poultry seasoning
- 1/4 tsp pepper
White Bean, Chicken Noodle, and Escarole Soup

- 10 cup water
- 6 cups chopped escarole (about 3/4 pound) or fresh spinach
- 2 teaspoons olive oil
- 2 garlic cloves, chopped
- 1/2 cup water
- 1/4 teaspoon crushed red pepper
- 1/4 teaspoon black pepper
- 1 (19-ounce) can cannellini beans or other white beans, drained
- 1 (10 3/4-ounce) can condensed reduced-sodium chicken noodle soup, undiluted (such as Campbell's Healthy Request)
- 1/4 cup (1 ounce) grated fresh Parmesan cheese

- 1 1/2 c. mashed, ripe bananas (3 medium)
- 2 T. skim milk
- 1 c. all-bran extra fiber cereal
- 1/3 c. margarine, softened
- 1/3 c. sugar
- 2 eggs
- 1/4 c. coarsley chopped nuts
