Spicy Chicken Tomato Soup

In a 5-qt. slow cooker, combine the first 13 ingredients
- 2 cans (14-1/2 ounces each) chicken broth
- 3 cups cubed cooked chicken
- 2 cups frozen corn
- 1 can (10-3/4 ounces) tomato puree
- 1 can (10 ounces) diced tomatoes and green chilies
- 1 large onion, finely chopped
- 2 garlic cloves, minced
- 1 bay leaf
- 1 to 2 teaspoons ground cumin
- 1 teaspoon salt
- 1/2 to 1 teaspoon chili powder
- 1/8 teaspoon pepper
- 1/8 teaspoon cayenne pepper
- 4 white or yellow corn tortillas (6 inches), cut into 1/4-inch strips
Bush's Best Black Bean Soup

In large pot over medium hear, cook onion in a little water for 5 minutes
- 1 onion, chopped
- 3 garlic cloves, chopped
- 1 t. cumin
- 3 t. chili powder
- 1/2 t. oregano
- 3 cans (15 oz) Bush's Black Beans
- Black pepper to taste
Mostaccioli Kidney Bean Salad

In small bowl, wisk, blend dressing ingredients
- Dressing:
- 1/4 C. wine vinegar
- 2 T. olive oil
- 1 1/2 t. dried dill weed (4 t. fresh)
- 1/2 t. dry mustard
- 1/8 t. pepper
- 1 garlic clove, minced
- Salad:
- 1 1/2 C. uncooked mostaccioli
- 1 (15.5oz) dark red kidney beans
- 1 C. sliced zucchini
- 1 sm. red bell pepper, cut in strips
- 1 sm. tomato, cut in wedges
- 1/2 C. parmesan cheese
Raspberry Corn Muffins

In a large bowl, combine the flour, cornmeal, sugar, baking powder, baking soda and salt
- 1 cup all-purpose flour
- 1 cup cornmeal
- 1/2 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 eggs, lightly beaten
- 1 1/2 cups (12 ounces) fat-free plain yogurt
- 2 tablespoons butter, melted
- 1 cup fresh raspberries
Southwestern Turkey Soup

Heat olive oil in a Dutch oven over medium-high heat
- 2 teaspoons olive oil
- 1 cup chopped onion
- 1 cup chopped green bell pepper
- 3 garlic cloves, minced
- 1 serrano chile, minced
- 2 tablespoons all-purpose flour
- 1 pound turkey tenderloin, cut into bite-sized pieces
- 2 tablespoons no-salt-added tomato paste
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/4 teaspoon freshly ground black pepper
- 1/8 teaspoon salt
- 4 cups fat-free, less-sodium chicken broth
- 2 bay leaves
- 1 (14.5-ounce) can diced tomatoes, drained
- 1 (15-ounce) can pinto beans, rinsed and drained
- 1 (15-ounce) can black beans, rinsed and drained
- 1 (11-ounce) can no-salt-added whole-kernel corn, drained
- 2 tablespoons chopped fresh cilantro
- 2 cups crushed baked tortilla chips (about 4 ounces)
- 1 cup diced peeled avocado
- 8 lime wedges
Theresa's Double-Tomato Soup

Melt butter in a large saucepan over medium heat
- 1 tablespoon butter
- 1 cup chopped onion (1 medium)
- 3/4 cup shredded carrot
- 1 tablespoon minced garlic
- 1 tablespoon minced shallots
- 1 teaspoon sugar
- 1/4 teaspoon freshly ground black pepper
- 1/8 teaspoon salt
- 10 large basil leaves, divided
- 3 drained sun-dried tomato halves, packed in oil with herbs (such as California Sun Dry brand)
- 2 (14.5-ounce) cans organic diced tomatoes, undrained
- 1 (14-ounce) can fat-free, less-sodium chicken broth

- 6 cups shredded red cabbage
- 2 cups grated carrot
- 3/4 cup thinly sliced green onions, divided
- 1/2 pound coarsely chopped cooked shrimp(grilled)
- 3 tablespoons low-sodium soy sauce
- 3 tablespoons rice vinegar
- 1 tablespoon canola oil
- 2 1/2 tablespoons creamy peanut butter
