I remember coming home sullen one day because we'd lost a softball game
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 3 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 6 to 7 cups thinly sliced peeled tart apples
- 1 tablespoon lemon juice
- Pastry for double-crust pie (9 inches)
- 1 tablespoon butter
- 1 egg white
- Additional sugar
Lemon Ricotta Pancakes

For rhubarb sauce, combine the rhubarb, water and brown sugar in a small saucepan
- 2 cups chopped fresh or frozen rhubarb
- 1/2 cup water
- 1/3 cup packed brown sugar
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup ricotta cheese
- 1 cup milk
- 2 tablespoons lemon juice
- 2 teaspoons grated lemon peel
Chive Scalloped Potatoes

In a small saucepan, melt butter
- 2 teaspoons butter
- 1 tablespoon all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon ground mustard
- 3/4 cup 2% milk
- 1 teaspoon minced chives
- 2 medium potatoes, peeled and thinly sliced
Grilled Corn and Black Bean Salad

Place corn on a grill rack; grill 20 minutes or until corn is lightly browned, turning every 5 minutes
- 3 ears shucked corn
- 1/2 C. fresh lime juice (about 2 limes)
- 1/3 C. minced red onion
- 1/3 C. minced fresh cilantro
- 3 T. white vinegar
- 2 t. sugar
- 2 t. ground cumin
- 2 t. chili powder
- 1 (15 oz) can black beans, drained
- lime wedges (optional)
Southwest Black Bean Soup

Soak beans overnight in water
- 1 lb. black beans
- 2 quarts water
- 1 large onion, coarsely chopped
- 1 to 2 cloves garlic, minced
- 2 (16 oz) cans chopped tomatoes
- 1 (4 oz) can chopped green chiles
- 1 t. cumin
- 1 t. chili powder
- 1 t. lemon juice
- 1/4 t. crushed red pepper
- 1/4 C. chopped cilantro
Thai-Style Chicken Recipe

In a small bowl, combine the soy sauce, lemon juice, basil, yogurt, lemon peel, garlic, ginger and pepper flakes
- 1/4 cup reduced-sodium soy sauce
- 3 tablespoons lemon juice
- 3 tablespoons coarsely chopped fresh basil or 1 tablespoon dried basil
- 2 tablespoons fat-free plain yogurt
- 2 teaspoons grated lemon peel
- 3 garlic cloves, minced
- 1 teaspoon ground ginger
- 1/2 to 1 teaspoon crushed red pepper flakes
- 4 boneless skinless chicken breast halves (4 ounces each)
Carrot Cake

Combine first 5 ingds. in a bowl; stir well, and set aside
- 2 c. flour
- 2 t. cinnamon
- 1 1/2 t. baking soda
- 1/2 t. salt
- 1/2 t. ginger
- 1/2 c. firmly packed brown sugar
- 1/2 c. plain low-fat yogurt
- 1/2 c. unsweetened applesauce
- 1/4 c. vegetable oil
- 2 T. water
- 1 egg
- 1 egg white
- 1 1/2 c. finely shredded carrot
- 1/3 c. raisins
- 1/4 c. crushed pineapple in juice, drained
- 2 t. vanilla, divided
- 1/3 c. light process cream cheese product, softened
- 1 c. sifted powdered sugar
Basic Skillet Cornbread

Preheat oven to 450*. Combine first 5 ingredients in a large bowl, and make a well in center of mixture
- 1 1/2 cups. yellow cornmeal
- 3/4 cup. all-purpose flour
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 cups. low-fat buttermilk
- 1 1/2 Tbs. vegetable oil
- 1 large egg, lightly beaten
- 2 large egg whites, lightly beaten
Sweet Potato, and Kale Soup

Heat oil in a large Dutch oven over medium-high heat
- 2 tablespoons olive oil
- 4 cups chopped onion (about 2 large)
- 1 teaspoon salt, divided
- 1/2 teaspoon crushed red pepper
- 6 garlic cloves, thinly sliced
- 8 cups coarsely chopped peeled sweet potato (about 2 1/4 pounds)
- 5 cups water
- 4 cups fat-free, less-sodium chicken broth
- 1 (16-ounce) package prewashed torn kale
- 1 (16-ounce) can cannellini beans or other white beans, rinsed and drained

- Glaze:
- 1/3 c. sugar
- 1 T. plus 1 t. cornstarch
- 1/2 t. cinnamon
- 1/8 t. nutmeg
- 2 c. chopped peeled tart apples
- 1/4 c. unsweetened apple juice
- 1 (4 oz) tube refrigerated crescent rolls
- 1 (3 oz) pkg cream cheese, softened
- 2 T. confectioners sugar
- 1/2 t. vanilla
- 1/4 c. confectioners sugar
- 2 t. 2% milk
