Whipped Sweet Potato Bake

HEAT oven to 350°F. Beat sweet potatoes, butter, cinnamon, ginger and nutmeg with mixer until blended
- 3 cans (15 oz. each) sweet potatoes, drained
- 1/4 cup (1/2 stick) butter or margarine, melted
- 1 tsp. ground cinnamon
- 1 tsp. ground ginger
- 1/4 tsp. ground nutmeg
- 3 cups JET-PUFFED Miniature Marshmallows
German Pancakes

Combine first 3 ingredients in a medium bowl; stir well
- 1/2 cup all-purpose flour
- 1 tablespoon sugar
- 1/8 teaspoon salt
- 3/4 cup skim milk
- 1 egg
- Vegetable cooking spray
- 6 tablespoons apricot preserves
- Orange slices (optional)
- Raspberries (optional)
- 1 1/2 teaspoons powdered sugar (optional)
Black Russian Cake

Mix all ingredients together with mixer for 1 minute on low
- Glaze:
- 1 yellow cake mix (no pudding) can use 2 Jiffy Mixes
- 1 (6 oz) Jello chocolate instant pudding
- 1/2 c. sugar
- 1 c. oil
- 4 eggs
- 1/4 c. Kahlua
- 1/4 c. vodka
- 3/4 c. water
- 3/4 c. chopped walnuts
- 1/2 c. unsifted powdered sugar
- 1/4 c. Kahlua
Cream of Carrot, Potato, and Turnip Soup

Melt butter in large saucepan over medium high heat
- 1 T. butter
- 2 1/2 c. sliced carrot (about 1 lb)
- 1 1/2 c. (1/2 inch) cubed peeled turnips (about 1/2 lb)
- 3/4 c. celery, chopped
- 2 1/2 c. (1/2 inch) cubed peeled red potato (about 1 lb)
- 1 1/2 c. water
- 1/4 t. salt
- 1/8 t. black pepper
- 2 (16 oz) cans fat-free, less sodium chicken broth
- 1 t. dried rubbed sage
Chicken Cacciatore Capellini

Cook pasta according to directions, omitting salt and fat
- 6 oz angel hair pasta, uncooked
- 4 (4 oz) skinned, boned chicken breast halves
- 1 1/4 C. coarsely chopped onion
- 1 1/4 C. coarsely chopped green bell pepper
- 2 C. commercial low-fat, low-sodium spaghetti sauce
- 1/4 t. salt
Garlicky Lima Beans

Sort and wash beans; drain
- 4 cups fresh lima beans
- 2 1/2 cups water
- 1 tablespoon olive oil
- 2 garlic cloves, crushed
- 3 thyme sprigs
- 1 bay leaf
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
Carrot Apple Salad

Drain pineapple, reserving juice in a bowl
- 1 can (8 ounces) unsweetened crushed pineapple
- 2 medium tart apples, diced
- 3 cups shredded carrots
- 3 tablespoons raisins
- 3 tablespoons flaked coconut
- 1/3 cup fat-free reduced-sugar vanilla yogurt
- 1/3 cup fat-free plain yogurt
- 3 tablespoons reduced-fat mayonnaise
- 1 T. lemon juice
Basil-Parmesan Angel Hair

Cook pasta according to package directions
- 1 package (16 ounces) angel hair pasta
- 2 tablespoons olive oil
- 1 can (12 ounces) fat-free evaporated milk
- 2/3 cup shredded Parmesan cheese
- 1/2 cup thinly sliced green onions
- 1/4 cup minced fresh basil
- 1 teaspoon grated lemon peel
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon pepper
- Additional fresh basil
- 12 lemon slices
Chicken Salad

Combine first 10 ingredients in a bowl, and stir well
- 1/3 C. sliced cleery
- 1/4 C. finely chopped green onion
- 1/4 C. low-fat miracle whip
- 3 T. chopped fresh parsley
- 2 T. plain nonfat yogurt
- 1 T. fresh lemon juice
- 1/2 t. salt
- 1/2 t. dried basil
- 1/4 t. pepper
- 1 (2 oz) jar diced pimento
- 1 3/4 C. chopped cooked chicken breast
Fat-Free Bean Salad

In a bowl, combine the green beans, kidney beans, onion, pickle relish and green pepper
- 2 cans (14-1/2 ounces each) French-style green beans, drained
- 1 can (16 ounces) kidney beans, rinsed and drained
- 2 cups chopped sweet onions
- 1 cup sweet pickle relish
- 1/2 cup chopped green pepper
- 1/4 cup white vinegar
- 1/3 cup sugar
