In a large skillet, saute the onion, green pepper, garlic, cumin and pepper in oil
- 1 medium onion, chopped
- 1 medium green pepper, chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1/4 teaspoon pepper
- 1 tablespoon olive oil
- 2 cans (15 ounces each) black beans, rinsed and drained
- 1 can (14-1/2 ounces) vegetable broth
- 1 package (10 ounces) frozen corn, thawed
- 4 green onions, thinly sliced
- 4 flour tortillas (8 inches)
- 1 cup (4 ounces) shredded reduced-fat cheddar cheese, divided
Hot German Bean Salad

Spray skillet with Pam. In hot skillet stir-fry carrot, onion, and celery for 2 minutes
- 1 medium, carrot, chopped
- 1/2 small red onion, chopped
- 1 stalk celery, sliced
- 1/2 c. water
- 1/4 c. vinegar
- 1 T. sugar
- 1 T. cornstarch
- 1 t. instant beef bouillon granuales
- 1/4 t. celery seed
- 1 15oz can black beans, rinsed and drained
- 1 8 oz can red kidney beans, drained
- 1 5 oz can chunk-style chicken
- 4 large lettuce leaves
- 1 red onion, cut in half and sliced (optional)

- 1/3 cup all-purpose flour
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
- 1/4 teaspoon pepper

- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 3/4 cup cold butter
- 2/3 cup vanilla yogurt
- 1 tablespoon lemon juice
- 2 teaspoons grated lemon peel
- 1 egg
- 1 egg yolk
- 1/2 cup lemon curd
- GLAZE:
- 1/2 cup confectioners' sugar
- 1 teaspoon water
- 1 teaspoon lemon juice

- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 2 1/2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 2/3 cup low-fat buttermilk
- 1/4 cup margarine, melted
- 1 egg, lightly beaten

- 1/4 cup seedless raspberry preserves
- 1 tablespoon sugar
- 1/4 teaspoon ground cinnamon

- 1/2 teaspoon salt
- 1 jar (18 ounces) chunky peanut butter
- 1/3 cup milk
- 10 large marshmallows

- 1/2 c. 1% low-fat milk
- 1 T. margarine
- 2 eggs, separated

- 1/8 t. salt
- 1 t. vanilla
- 1 t. almond extract
- 1/2 c. seedless blackberry jam
- 2 t. powdered sugar
Orange Gelatin Pretzel Salad

In a small bowl, combine pretzels and 3 teaspoons sugar; stir in butter
- 2 cups crushed pretzels
- 3 teaspoons plus 3/4 cup sugar, divided
- 3/4 cup butter, melted
- 2 packages (3 ounces each) orange gelatin
- 2 cups boiling water
- 2 cans (8 ounces each) crushed pineapple, drained
- 1 can (11 ounces) mandarin oranges, drained
- 1 package (8 ounces) cream cheese, softened
- 2 cups whipped topping
- Additional whipped topping, optional
Coconut Shrimp

Heat oven to 400* Peel and devein shrimp, leaving tails intact
- Salsa:
- 28 large shrimp (about 1 1/2 lbs)
- 1/3 C. cornstarch
- 3/4 t. salt
- 1/2 to 3/4 t. ground red pepper
- 3 large egg whites
- 1 1/2 c. flaked sweetened coconut
- 1 C. finely chopped fresh pineapple
- 1/3 C. finely chopped red onion
- 1/4 C. finely chopped fresh cilantro
- 1/4 C. pineapple preserves
- 1 T. finely chopped seeded jalapeno pepper
- 1 1/2 T. fresh lime juice
- 1/4 t. black peppere
