Three Bean Salad

Drain and rinse beans. Add pepper and onion
- 1 can green beans
- 1 can yellow wax beans
- 1 can kidney beans
- 1 can garbonzo beans
- 1 can butter beans
- 1 can lima beans
- 1 chopped green pepper
- 1 chopped red or white onion
- 3/4 cup sugar
- 2/3 cup white vinegar
- 1/3 cup oil
- pepper
Apple and Spice Muffins

Preheat oven to 400°. Combine first 8 ingredients in a large bowl; make a well in center of mixture
- 1 1/4 cups all-purpose flour
- 1/2 cup cornmeal
- 1/3 cup sugar
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon ground ginger
- 1 3/4 cups shredded Golden Delicious apple
- 3/4 cup low-fat buttermilk
- 2 tablespoons vegetable oil
- 1 large egg, lightly beaten
- Cooking spray
- 2 teaspoons sugar
- 1/4 teaspoon ground cinnamon
Southwestern "fried" chicken

Combine first 7 ingds. in small bowl; stir well
- 1 T. garlic powder
- 1 T. onion powder
- 1 T. paprika
- 1 T. chili powder
- 1 t. cumin
- 1/2 t. salt
- 1/2 t. pepper
- 8 (6 oz) skinned chicken breast halves
- 1 1/2 C. low fat buttermilk
- 1/2 C. dry breadcrumbs
- 1/2 C. yellow cornmeal

- One 7-ounce package crisp Italian-style ladyfingers, coarsely chopped
- 6 tablespoons unsalted butter, melted

- 1 1/2 pounds cream cheese, at room temperature
- 1 cup sugar
- 1 cup marscapone cheese, at room temperature
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon salt
- 3 large eggs, at room temperature
- 1 1/4 cups mini semisweet chocolate chips

Almond Chocolate Biscotti

In a large bowl, beat the cake mix, flour, butter, eggs, chocolate syrup and extracts until well blended
- 1 package (18-1/4 ounces) chocolate cake mix
- 1 cup all-purpose flour
- 1/2 cup butter, melted
- 2 eggs
- 1/4 cup chocolate syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1/2 cup slivered almonds
- 1/2 cup miniature semisweet chocolate chips
- 1 package (10 to 12 ounces) vanilla or white chips
- 2 tablespoons shortening
