Heat oil in a large saucepan over medium heat
- 1 tablespoon olive oil
- 1/2 cup diced celery
- 1/2 cup minced onion
- 1/4 cup diced green bell pepper
- 3 tablespoons chopped carrot
- 1 tablespoon minced garlic
- 1 1/2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon chili powder
- 1/4 teaspoon freshly ground black pepper
- 2 cups vegetable broth or chicken broth
- 1 cup water
- 3 (15-ounce) cans black beans, rinsed and drained
- Sliced green onions (optional)

- 2 (6-ounce) packages fresh baby spinach
- 1 1/4 cups (5 ounces) shredded reduced-fat sharp cheddar cheese

- 1 1/3 cups all-purpose flour (about 5 3/4 ounces)
- 1 1/2 cups fat-free milk
- 1 cup egg substitute
- 1 teaspoon salt

Place corn in a food processor or blender; cover and process until coarsely chopped
- 1 can (15-1/4 ounces) whole kernel corn, drained
- 1 cup all-purpose flour
- 1 cup cornmeal
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 2 egg whites
- 3/4 cup fat-free milk
- 1/4 cup canola oil
- 1 cup (4 ounces) shredded reduced-fat cheddar cheese
- 1 can (4 ounces) chopped green chilies

- glaze:
- 1/3 C. butter, melted
- 1 C. sugar
- 2 eggs
- 1 1/2 C. flour
- 3 T. lemon juice
- 1/2 C. walnuts, chopped
- 1 t. B.P.
- 1 t. salt
- 1/2 C. milk
- 1 T. lemon rind
- 1/2 C. lemon juice
- 1/2 C. sugar
Lemon-Glazed Cranberry Rolls

Preheat oven to 375°. Unroll pizza dough, and pat into a 12 x 9-inch rectangle
- 1 (10-ounce) can refrigerated pizza crust dough
- 1/2 cup orange marmalade
- 2/3 cup dried cranberries
- Vegetable cooking spray
- 1/2 cup sifted powdered sugar
- 1 1/2 teaspoons lemon juice
- 1 teaspoon hot water
Fish Tacos with Mango Salsa Verde

1. To prepare salsa, combine the first 7 ingredients in a small bowl; toss well
- Salsa:
- 1/2 cup chopped peeled mango
- 1/2 cup chopped tomato
- 2 tablespoons finely chopped red onion
- 4 teaspoons chopped fresh cilantro
- 1 teaspoon fresh lemon juice
- 1/4 teaspoon black pepper
- 1/4 teaspoon chili powder
- Tacos:
- 2 (6-ounce) tilapia fillets
- Cooking spray
- 1/2 teaspoon Old Bay seasoning
- 4 (8-inch) corn tortillas
- 1 cup mixed salad greens

Hearty Meatless Chili

In a Dutch oven, saute onion in oil until tender
- GARNISH:
- 1 small onion, chopped
- 1 tablespoon olive oil
- 3 garlic cloves, minced
- 2 medium zucchini, finely chopped
- 2 medium carrots, finely chopped
- 3 tablespoons cornmeal
- 2 tablespoons chili powder
- 2 tablespoons paprika
- 1 tablespoon sugar
- 1/2 teaspoon ground cumin
- 1/4 to 1/2 teaspoon cayenne pepper
- 2 cans (one 28 ounces, one 14-1/2 ounces) diced tomatoes, undrained
- 2 cans (15 ounces each) pinto beans, rinsed and drained
- 1 can (16 ounces) kidney beans, rinsed and drained
- 8 tablespoons fat-free sour cream
- 8 tablespoons thinly sliced green onions
- 8 teaspoons minced fresh cilantro
Curried Pumpkin Soup

- 1 teaspoon canola oil
- 2 cups chicken or vegetable broth
- 1-1/2 cups canned pumpkin
- 1 tablespoon lemon juice
- 1 teaspoon curry powder
- 1 teaspoon sugar
- 1/2 teaspoon salt, optional
- Dash pepper
- 1/2 cup half-and-half cream or evaporated milk
- Chopped fresh parsley, optional

- 2 1/2 c. fat-free Cool Whip, thawed
