Pecan Pie Cake

Heat oven to 325°. Place cake mix, melted butter and 1 egg in large bowl
- 1 package (18.25 ounces) plain yellow cake mix
- 1/2 cup (1 stick) butter, melted
- 4 eggs
- 1 1/2 cups light corn syrup
- 1/2 cup firmly packed dark-brown sugar
- 1 teaspoon vanilla
- 2 cups chopped pecans, toasted
Macoroni and Cheese ~ Classic

1. WHISK FLOUR INTO BUTTERPreheat oven to 400°
- 2 cups milk
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 (10-oz.) block extra sharp Cheddar cheese, shredded
- 1/4 teaspoon ground red pepper (optional)
- 1/2 (16-oz.) package elbow macaroni, cooked
Vidalia Onion Souffle

Melt butter in a large skillet over medium heat; add chopped onions, and sauté 10 to 15 minutes or until tender
- 2 tablespoons butter or margarine
- 5 medium Vidalia or sweet onions, chopped (about 4 cups)
- 2 cups fresh bread cubes (about 10 slices, crusts removed)
- 1 (15-ounce) can fat-free evaporated milk
- 3 large eggs, lightly beaten
- 1 1/4 cups (5 ounces) shredded Parmesan cheese
- 1 teaspoon salt
Gingered Broccoli

- 8 oz package cream cheese
Green Chili

After browning meat and garlic add tomatoes, beef stock, water and spices
- 1 1/2 lbs pork and/or beef ground
- 8-10 garlic minced (sauté until brown)
- 1 can whole tomatoes
- 2 cans beef stock
- Can of water
- 2 t cumin
- 1 t basil
- 1 t sage
- 2-3 potatoes, diced
- 2 cans pinto beans with liquid
- 3-4 cans green chilies
- 1 -2 t cayenne pepper (if want HOT)
Chicken in Lemon Sauce

Melt butter in large skillet
- 1/4 butter
- 4 chicken breasts, halved, boned, skinned
- 2 T white wine
- 1/2 tsp grated lemon rind
- 2 T lemon juice
- salt & white pepper to taste
- 1 cup cream
- 1/3 cup grated Parmesan cheese
- 1 cup sliced mushrooms
- Lemon wedges & Parsley ~ optional
Summer Tortellini

- Ingredients
- 1 (19-oz.) package frozen cheese tortellini
- 2 cups chopped cooked chicken
- 1/4 cup sliced green olives
- 1/4 cup sliced black olives
- 1/4 cup diced red bell pepper
- 2 tablespoons chopped sweet onion
- 2 tablespoons chopped fresh parsley
- 2 tablespoons mayonnaise
- 1 tablespoon red wine vinegar
- 1 teaspoon herbes de Provence*
- 1/4 cup canola oil
- Salt to taste
- Garnish: fresh parsley sprigs
Tomato Casserole

Melt the butter in a large skillet
- 3 T butter
- 1/2 c chopped onion
- 1/2 c chopped green bell pepper
- 1/2 c chopped celery
- 1 28 oz. can diced tomatoes
- 1/2 c sugar
- 2 - 3 T chopped fresh basil
- Salt
- pepper
- 2 T cornstarch
- 2 t vinegar
- 2 t water
- 1 1/2 cup buttered bread crumbs
Busy Day Stew

Brown stew meat & sprinkle with dry onion soup mix Put all ingredients in crock pot and cook all day
- 2 lbs. stew meat
- 1 can mushroom soup
- 1 can onion soup (creamy)
- 1 cup red wine OR 1 can celery soup (may have to add liquid so it won't be so thick)
