- 1/2 teaspoon salt, plus 1 teaspoon

- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 3 ounces prosciutto, chopped
- 2 cloves garlic, chopped

Roasted Vegetables

Serve these delicious roasted vegetables with any main dish or chop them up and add to pasta and rice recipes
- 4 sprays oil,divided
- 2 med.sweet red peppers,cut into 8 thick strips
- 1 med.green pepper,cut into 8 thick strips
- 1 med.summer squash,cut thickly on the diagonal
- 1 med zucchini,cut thickly on the dia gonal
- 1 med.red onion,cut into lg.wedges
- 375 ml (12 oz) canned artichoke hearts,without oil,draine
- 1 tbsp fresh thyme,minced
- 1/2 tsp salt
- 1/4 freshly ground black pepper
Razor Clams and Celeriac Napoleon

You can cubstitute regular clam strips for the razor clams
- 36 razor clams
- 2 cups fish stock,vegetable stock,or salted water
- a squeeze of lemon juice
- 1/2 tsp salt
- 1 head celeriac,peeled,sliced very thin,and cut into 2-inch x 2 inch squares(about 16 pieces)
- 2 cups Vin Blanc Sauce(see note below)
- 6 chives,finely chopped.
- Vin Blanc Sauce
- This is exactly the same recipe as the Dill Cream Sauce but the dill is kept out of the recipe and an additional 2 tbsp of butter is whisked in at the end of cooking.
